NEVER OVER-BOIL onions or cabbage. Due to their high sulphur content they give off a peculiar smell if boiled too long.

TO SEPARATE EGG YOLKS from the whites perfectly, stand a small funnel in a glass. Break the egg into the funnel and the white will drain out into the glass, leaving the yolk intact in the funnel.

INSTEAD OF USING EGGS for cooking cutlets, use roasted black gram {channa). This can be ground into a fine powneeded, mix with water into a thin batter. Coat the cutlets and fry as usual.der and stored in an airtight jar.

WHEN CURRY LEAVES are plentiful, pick them in large quantities and leave them to dry in a cool airy place. When perfectly dry, store them in air-tight containers. They retain their flavour and can be used when fresh leaves are not available.

NEVER THROW AWAY the water in which rice has been boiled, as it contains a lot of vitamins. Ideally, rice should be cooked with just enough water for it to cook in and be absorbed. However, if you cannot get used to that way of cooking it, use the leftover water to make a cooling and nourishing drink. In summer flavour it with lemon juice and salt. In winter try it with honey and orange juice.

TO BOIL A CRACKED EGG perfectly, add a teaspoon of vinegar to the boiling water.

VITAMIN C is destroyed quickly in cooking - so cook your Vitamin-rich vegetables in the smallest amount of water possible and for a short amount of time.
