Meat Fry with Gravy
Ingredients : 1. 1 kg mutton with fat, cut into small pieces. 2. 3/4 dsp. chilli powder, 1 12 dsp. coriander powder, 1/2 turmerice power, 1/2 tsp. pepper powder, pinch of aniseeds, 1/8 tsp. cumin seeds, 1/4 cup sliced button onions 3. 3 dsp. oil, 4. 2 tsp. mustard seeds, 5. 1/4 cup thinly sliced button onions, 1 dsp long slices of garlic, 2 tsp. finely chopped ginger. A few curry leaves. 6. 1" cinnamon, 6 cloves, Vinegar and Salt-to taste
Method
Grind ingredients in item 2 to a coarse paste. Heat oil and add mustard seeds. When it splutters, add onion, garlic, ginger, curry leaves and saute till the ingredients turn brown and the oil seperates. Add cinnamon, cloves and the ground masala. Stir well and saute the masala on a low fire till it is well cooked and roasted.
Put in the prepared meat and allow it to cook in the masala with enough water. Add vinegar and salt. Close the vessel with a deep lid containing water. If extra water is needed to cook the meat, use the hot water in the lid. Throw away the water from the lid, as soon as the meat is cooked.
When the meat is done and the gravy is thick and creamy, remove from fire. Serve hot.
