പഴുത്ത മാങ്ങാ 2
പച്ചമുളക് അറ്റം പിളർന്നത് 3
മഞ്ഞൾപൊടി 1 നുള്ള്
ജീരകം 1/ 2 ടീസ്പൂണ്
അദികം പുളിക്കാത്ത മോര് 1/ 2 ലിറ്റർ
തേങ്ങ ചിരകിയത് 1/ 2 മുറി
ഉലുവപൊടി 1/ 2 ടീസ്പൂണ്
വെളിച്ചെണ്ണ1 ടേബിൾസ്പൂണ്
കടുക് 1/ 2 ടീസ്പൂണ്
വറ്റൽമുളക് 3
കറിവേപ്പില ഒരു തണ്ട്

തയാറാക്കുന്ന വിധം

മാങ്ങായുടെ തൊലി നീകി പച്ചമുളക് , മഞ്ഞൾപൊടി , ഉപ്പു 1/ 2 കപ്പ് വെള്ളം എന്നിവ ചേർത്ത് വേവികുക . വെന്തു വരുമ്പോൾ തേങ്ങയും ജീരകവും നല്ലതുപോലെ അരച്ച് ചേർകുക. ചേരുവ ഒന്ന് ചൂടാകുമ്പോൾ വെള്ളം ചേർക്കാത്ത ഉടച്ചെടുത്ത മോര് ഒഴിച്ച് ഇളകുക. പതഞ്ഞു വരുമ്പോൾ ഉലുവപൊടി ചേർകുക. വെളിച്ചെണ്ണയിൽ കടുകും, വറ്റൽമുളകും, കറിവേപ്പില ഇവ വറുത്തു ഇടുക.

Recipe for Mambazha Pulissery

Ingredients :

Ripe Mango /Manga : 2 (peel and cut into small pieces)
Turmeric powder : 1/2 tsp
Red Chilly powder : 1/4 tsp
Sugar : 1 tsp (optional) If the mango is not that ripe then u can add sugar.
Curd/Yogurt : 2 cup
Curry leaves : 1 sprig
Salt to taste

For Grinding :
Grated coconut : 1 cup
Green chilly : 3 nos
Garlic : 2 pods
Cumin seeds : 1/2 tsp
Curry leaves : 2-3 leaves

For Seasoning :
Mustard seeds : 1/2 tsp
Fenugreek seeds : 1/4 tsp
Dry red chilly : 2-3
Curry leaves : few
Coconut Oil : 1 tbsp


Method of Preparations :

1. In a pan,place the cut mango pieces, turmeric powder,red chilly powder,curry leaves and salt.
2. Pour enough water to cover the ingredients and cook till mango pieces are well cooked and turns soft.
3. Grind grated coconut,green chillies,garlic,cumin seeds,curry leaves to a fine paste adding half of the yogurt.
4. Add this paste to the cooked mangoes,add salt and mix well; allow it to boil on a low heat.
5. Whip the remaining yogurt/curd and add to the curry and mix well; Bring to a boil and cook for a minute.Keep stirring till the gravy is heated through,(don’t allow yogurt to curdle) now add sugar;Remove from the heat and keep it aside.
6. In a small frying pan, heat coconut oil and add the mustard seeds. When it start to splutter,add fenugreek seeds,curry leaves and red chilies; Pour this over the prepared Pulissery/Mango-yogurt gravy and mix well.
7. Yummy Mambazha pulissery is ready.Serve with rice and enjoy!!.
