Ingredients
Cubed Ash Gourd- 1-1/2 cups
Cow peas- 1/4 cup
Green chillies slit- 3-4
Coconut milk (thick)- 100 ml
Curry leaves- a few
Salt to taste
Coconut oil (optional) – 1 teaspoon ( I omitted this)
Method
Cook the peas till just done. Make sure it is not squishy. It should retain it’s shape.
Take a pan and put the chunks of ash gourd in it along with salt and green chillies. Sprinkle a bit of water. Make sure not to add too much water, as the ash gourd has water content and will release its juices. Cover and cook till the pieces are done but firm. Add the cooked cow peas into the ash gourd and curry leaves along with coconut milk and mix well. Cook on low heat for sometime. Switch off heat just before it comes to a boil. If using coconut oil, drizzle over the top and serve.
