    Default Banana Pudding



    Ingredients :


    1 cup(s) clarified butter (ghee)
    2 cup(s) fine semolina (or cream of wheat)
    4 cups milk
    1 cups(s) sugar
    4 ripe bananas cut in fine roundels

    Preparation :

    - Heat the clarified butter (ghee) in a pan and roast the semolina on low heat stirring continuously for about 3 minutes or till the raw smell is gone and it gives a nice aroma.
    - Add the milk and sugar. Stir well. Add the banana roundels and mix well.
    - Keep stirring on very low heat heat for about 3 minutes or till all the moisture has evaporated.

    Carrot Pudding


    Ingredients
    4 cups milk
    2 tablespoons long.grain rice
    2 cups firmly packed peeled and grated carrots
    1/2 cup granulated sugar
    2 tablespoons slivered blanched almonds
    1/2 teaspoon ground cardamom
    1 teaspoon rose water (optional)
    1/4 cup heavy cream
    1/4 cup chopped pistachios

    Method
    Combine the milk and rice in a large, heavy saucepan and bring to a boil over moderate heat, stirring frequently. Reduce the heat and cook uncovered at a slow boil for 20 minutes, stirring frequently.
    Add the carrots and continue cooking uncovered for 15 minutes, stirring frequently. Add the sugar and almonds and cook an additional 10 minutes, stirring frequently, until the mixture begins to stick to the bottom of the pan. Remove from the heat and allow to cool to room temperature. Stir in the cardamom, optional rose water, and cream. Chill thoroughly. When chilled, the pudding should have a consistency slightly thinner than rice pudding, but it should not be runny. Add a little milk if it is too thick. Serve garnished with chopped pistachios.

    Mango Pudding


    Ingredients:
    1 cup mango pulp
    1 cup cottage cheese(paneer)
    1 cup cream
    1 tblsp gelatin
    1/4th cup water
    1/2 cup sugar
    1 cup mango cubes
    cream and cherry for garnishing

    How to make mango pudding:
    * Dissolve the gelatin in 1/4 th cup of water. Keep it aside.
    * In a mixer blend the mango pulp, paneer cream and sugar.
    * Take a bowl and mix both the blended mixture and the dissolved gelatin.
    * Keep it in the refrigerator for setting.
    * When fully set garnish with mango pieces, cream and cherries and serve immediately.

    Pineapple Pudding



    Ingredients:

    * Pineapple 1 big
    * Whipped cream 1 pkt
    * Milkmaid 3/4 to 1 tin
    * Pineapple jelly 2 pkt
    * Cold water 2 cup
    * Hot water 2 cup
    * Sugar 1 Tbsp



    Method

    Chop pineapple well and cook it with sugar. Allow it to cool. Prepare jelly by following the instructions on the packet. (I prepared it by pouring 2 cups of hot water into the jelly mix, dissolving it well, then pouring cold water and cooling it). Add milkmaid into the prepared jelly mix and combine well. Put cooked pineapple into this and mix well. Transfer it into a tray and refrigerate it. Set it well and spread the whipped cream over it.

    Lovely and delicious dishes.. I like the most pineapple pudding which is totally new for me. I will try out as soon as possible.
