    Rawa Laddu



    Ingredients

    2 cups Fine Semolina/Rawa/Suji
    1.5 cups Powdered Sugar
    3/4 cup Ghee
    1 tsp Powdered Cardamom
    8-10 Cashews cut into pieces (Optional)
    12-15 Raisins (Optional)

    Method

    1) Place rawa in a microwave safe bowl and add ghee to it.. Mix well and place in microwave on high for 6 mins
    2) Keep stiring in between at interval of every one minute.. (6 mins)
    [In case not using microwave:
    *1) Heat ghee in a pan and add semolina to it
    *2) Roast on low medium stiring constantly till u smell aroma of rawa.. (30-40 mins)
    This procedure usually takes 30 mins or so and your hands tend to retire before the rolling of laddus starts!
    Follow rest of the steps as below]
    3) When done, remove and set aside to cool in a wide plate (30 mins)
    4) Once cool, add powdered sugar cardamom and nuts and mix well to remove lumps. I prefer not adding any nuts to rawa laddus.
    5) Roll laddus with hand.
    6) If they break easily and are hard to roll, add 2-3 tbsp hot melted ghee and then try rolling in circular shape..
    7) Store in air tight container and enjoy for next few days!

    Besan Ladoo





    Ingredients

    Channa Dal : 1 / 2 kg (coarsely grinded) Besan
    Ghee : 1 / 4 kg Preferably home made
    Sugar : 275 gms
    Nutmeg : 1
    Cloves : 15
    Raisins : 20-25

    Method

    1. Firstly heat the ghee in a heavy bottomed pan and roast the besan over low heat. Stir constantly and dont allow any lumps to form. When ghee leaves the sides of the pan, the besan is ready, around 45-50 minutes. The besan should be reddish in colour and give a good aroma.
    2. Keep the mixture aside to cool. Grind the sugar in a mixer and add to it.
    3. Add the other spices powder (grinded) and mix well with hand. Put 1 raisin inside and make a ladoo.

    Boondi Laddu

    Ingredients

    Gram flour 2 cups
    Sugar 2 cups
    Baking soda ½ tsp
    Cashewnuts 50 gms
    Raisins 50 gms
    Cardamom 15 nos
    Saffron few strands
    Milk few drops
    Ghee ½ kg

    Method


    * Shell and powder cardamom. Add ¼ cup water to sugar, heat until sugar melts. To check if the sugar solution is ready, take a drop of the solution and drop it in water-if it remains intact and does not dissolve right away in water, the sugar solution is ready.
    * Add saffron and cardamom powder to it. (While preparing the sugar solution, add a few drops of milk. Impurities will collect on the surface in a layer - remove it.) .
    * Add soda and water to gram flour, and make a paste, without lumps. Paste should not be too watery
    * Heat ½ kg. of ghee. Put gram flour in boondi maker and fry boondi. Remove when light yellow.
    * Fry cashew and raisins. Add boondi, cashew and raisins to sugar solution and mix. Cool.
    * Rub some ghee on your palms. Make laddus by squeezing the boondi in your hands.

    Coconut Ladoo



    Ingredients
    Shredded Coconut- 2 cups
    Sweet Condensed milk- 1 cup
    Milk- 1/2 cup
    Sugar - if you need extra sweetness
    Cardamon powder- 1/2 tsp
    Ghee- 2 tsp
    Cashew nuts chopped- 2 tsp
    Sweetened coconut powder- 1/4 cup

    Heat a heavy bottom pan and add ghee and coconut. Roast them for a few seconds till there is a slight change in color. Do not allow the coconut to change color to brown. Add in half cup of milk and allow to cook. Now add in the condensed milk and cardamon and stir well. From a loose mass the mixture will get thick and form a single mass. Continuously stir in till the mixture leaves the edges of the pan. Spread it on a greased tray and allow to cool a bit or till it is safe to handle. make small balls or ladoos and roll on coconut powder and then allow to cool off completely.
