    Sandwich


    Sandwich Dhokla
    Ingredients

    1 Cup Tur dal
    1 Cup Chana dal
    1/2 Cup Moong dal
    1/2 Cup Urad dal
    6 Cups uncooked Rice or Rice Flour
    2 table spoon Ginger Garlic & Chilli paste
    2 cups sour Yoghurt
    1 teaspoon Fresh Yeast (only for people in cold climate countries)
    1 teaspoon Turmeric powder
    1 table spoon Oil
    1/2 teaspoon Baking Powder

    For Thadka

    2 tablespoon Oil
    1 tea spoon Mustard seeds
    1 tea spoon Sesame seeds
    1/2 tea spoon Hing

    For chutney

    Coriander bunch 1
    3 to 4 medium size Green Chillies
    2 table spoon Ginger Garlic paste
    1 table spoon Coconut shredded (optional)
    1 tea spoon Lemon Juice
    Salt to taste

    Method


    1. Soak all the dals & rice atleast 6 to 8 hours.
    2. Grind coarsely with yeast & yoghurt and leave to ferment for atleast 12 hrs.(consistency should be thick like cake batter. You need good fermentation)
    3. Make a paste of ginger & green chillies & add paste to the fermented mixture. Add turmeric powder and salt to mixture.
    4. Heat the oil in small pan & add baking powder. When small bubble comes add this to mixture, stir well.
    5. Grease a dhokla mould or a shallow cake tin or small thali with a little oil. Pour half of the quantity which would normally take for one mould or thali. Steam it for 5 to 8 minutes.
    6. Then spread the chutney on the batter. Then put another layer on it & steam for 10-12 min. Cool it for some time.
    7. Cut into squares & arrange in a serving plate/bowl.
    8. Heat oil in a pan. Add mustard seed & sesame seeds. When the seeds begin to crackle then add hing, remove and pour over the dhoklas.
    9. Serve hot garnished with chopped green coriander leaves and grated coconut. Hope you enjoy it.

    In a blender grind coriander leaves, coconut, chillies, ginger garlic paste and salt with limited amount of water so that the paste remains in the thick consistency. Add salt to it along with the lime juice.

    Party Sandwich

    Ingredients

    1 loaf slice bread (preferably round 12 slices)
    2 tbsp. softened butter to apply on slices
    1 capsicum
    2 med. potatoes boiled, peeled
    15-20 baby cherry tomatoes
    1 cup prepared mayonnaise
    a few toothpicks
    1/4 cup all purpose green chutney (refer recipe)
    1/2 cup grated cheese

    Method


    1. Cut capsicum into thin slivers or triangles.
    2. Pick off stalks of tomatoes if any.
    3. Slice potato into 8 round slices.
    4. Apply butter to all slices on one side.
    5. Arrange on a clean surface in rows of 4, in three columns.
    6. All slices must have buttered side up.
    7. Apply chutney on 4 slices, mayonnaise on 4 and tomato ketchup on 4
    8. Pile one chutney slice over ketchuped slice, with applied side up.
    9. Now pile one mayonnaised slice over chutney slice, applied side down.
    10. Now press gently, cut three layered round into 2 half semicircular sandwiches.
    11. Break some toothpicks into 2 if desired or use whole.
    12. Place a slice of potato over sandwich on one side.
    13. Arrange 2 tomatoes, a piece of capsicum in such a way over potato slice,
    14. That you can secure all by piercing the toothpick through sandwich.
    15. Now sprinkle some grated cheese below this decoration on sandwich.
    16. Serve with ketchup and potato chips if desired.

    Carrot Sandwich

    Ingredients


    6 slices fresh sandwich bread
    2carrot grated
    1 potato grated
    1 tbsp. cabbage grated
    1 capsicum grated
    1 tbsp. butter
    1 tbsp. cheese grated (cream or processed)
    1 tbsp. corn flour
    1 cup milk
    1/2 tsp. black pepper
    salt to taste

    Method

    1. Melt the butter. add all vegetables.
    2. Stir fry for 3-4 minutes.
    3. Dissolve corn flour in the milk. Add to the vegetables, stirring continuously.
    4. Add the salt, pepper, cheese and cook, stirring continuously till thick and creamy.
    5. Cool the mixture for 10 minutes.
    6. Pile onto each slice and grill in a hot oven for 5-7 minutes till the bread gets crisp.

    Potato Sandwich

    Ingredients

    4-5 big Potatoes
    200 grams Cottage Cheese
    Salt to taste
    Pepper to taste
    50 grams Cabbage
    1 tablespoon Cream
    1/2 teaspoon Mustard powder
    1 teaspoon Mustard Powder
    1 teaspoon Vinegar
    1 teaspoon Tomato Sauce
    Coriander Leaves for garnishing
    1 Cucumber
    2 tablespoon Butter

    Method


    1.Wash pre-boiled potatoes, take care to have them half cooked, so that slices of 2 or 3 cm can be easily cut from them.
    2. Peel potatoes. Cut 2-3 cm long slices.
    3.In a non stick pan melt butter. When a little hot fry potatoes to golden brown taking care that they dont break.

    Filling


    1. Grate cheese.
    2. Beat cream lightly.
    3. Thinly cut cabbage after washing.
    4. Now add cheese to the already beaten cream. Mix in salt and pepper, mustard powder sauce and vinegar. Mix well.
    5. Now on each potato slice put some cut cabbage, a spoon of this mixture. Place another fried potato slice on the top.
    6. Serve with tooth pick, tomato sauce.

    Cabbage Sandwich

    Ingredients


    1 cup cabbage shredded fine
    1 carrot cut in thin juliennes
    2 garlic pods
    1/2 piece ginger
    1/2 tbsp butter
    salt to taste
    1/4 tsp pepper powder
    2 slices sandwich bread

    Method

    Heat the butter in a scillet. Add the cabbage and carrot. Stir fry till tender. Add salt, pepper, garlic and ginger stir and remove. Cool the mixture.

    Place a spoonful of the mixture on a slice of bread. Place the other slice on top of it. Grill in a pre-heated oven (sandwich toaster may also be used). Remove when golden brown and sprinkle with fine grated cheese while still hot. Serve with tomato ketchup or mexican sauce.
