Kerala egg recipes
Egg Roast

Ingredients
Eggs - 6 nos
Onion - 4 nos
Garlic pods - 5 nos
Ginger - 1 small piece
Green chillies - 5 nos
(chopped)
Coriander powder - 1 tbsp
Red chilly powder - 1/2 tbsp
Turmeric powder - 1/4 tbsp
Cumin(Jeerakam) powder - 1 tbsp
Tomato(medium) - 3 nos
Coriander leaves for garnishing
Vegetable oil - 3 tbsp
Salt - As reqd
Method
1)Boil eggs, shell and keep it aside.
2)Heat oil in the pan.
3)Add onions, green chillies, ginger and garlic paste.
4)Fry onions till it turns yellowish brown.
5)Add tomatoes and fry it properly.
6)Slit the boiled eggs and put them in the pan.
7)Add red chilly powder, turmeric powder, coriander and cumin seeds powder and salt on the eggs.
8)Stir it, cover the pan and let it cook for 15 mins.
9)Remove the cover of the pan.
10)Garnish with coriander leaves.

Green Peas Egg Curry

Ingredients
Frozen green peas- 1 1/2 cup
Hard boiled eggs- 3
Onion- 1 medium
Tomato puree- 1/2 cup
Ginger garlic paste- 11/2 tsp
Coconut milk thick-3/4 cup
Chilly powder- 1 tsp
Coriander powder- 1 1/2 tsp
Turmeric powder- 1/4 tsp
Garam masala- 1/2 tsp
Meat masala- 1/2 tsp
Coriander leaves
Method
Heat oil in a pan and saute onions till golden brown. Add ginger garlic paste and turmeric powder and saute for a minute. Add tomato puree( you can add chopped tomatoes too) and salt and saute till oil separates. Add frozen green peas, chilly powder,coriander powder and masala. Close lid and allow to cook. Add coconut milk and boiled eggs and allow to simmer. Finally add chopped coriander leaves. Serve warm with appam/ parottas or pathiri.

Masala Egg Fry

Ingredients
1)Hard boiled eggs-4
Chilly powder- 3/4 tsp( as per taste)
( or pepper powder- 1/2 tsp)
Turmeric powder- 1/3 tsp
Ginger garlic paste- 1/2 tsp
Corn starch- 3/4 tsp
salt to taste
2)Onion- 1 medium
Ginger- 1 inch thick
Garlic - 3 pods
Garam masala- 1/2 tsp
Curry leaves- a few
Spring onions or coriander leaves- a little
lemon juice- a few drops(optional)
oil for frying
Salt to taste
Method
Cut hard boiled eggs into two. Make a paste of all those ingredients listed under one and apply on the eggs. Heat frying pan and pour one tsp of oil and layer the eggs and fry on both sides. In the same oil saute curry leaves,ginger and garlic for a minute followed by onions. Fry this till onions are golden brown. Add garam masala,lemon juice and spring onions/coriander leaves and fry for a minute. Carefully place the fried eggs and gently mix in every thing together. Serve this with jeera rice, pulao or simply with rice and sambar.
