Chocolate cake
A rich dark chocolate cake.
Preparation Time : 5mins
Baking Time : 20 mins.
Ingredients

2 tablespoons cocoa powder
1 cup plain flour (maida)
1 teaspoon baking powder
1/2 teaspoon soda bi-carbonate
1/2 can (400 grams for full can) condensed milk
1/2 cup melted butter
1 teaspoon vanilla essence
Method
1.Sift the cocoa powder, flour, baking powder and soda bi-carbonate.
2.Combine all the ingredients together with 1/2 cup (100 ml.) of water in a bowl and mix well using a whisk.
3. Pour this mixture into a greased 150 mm. (6") diameter baking tin.
4. Bake in a pre-heated oven at 180°C (360°F) for 20 minutes or till a knife inserted into the cake comes out clean.
5. Unmould and cool on a wire rack.
6. Cut into 1" squares and serve or use as required.

Crab Cakes
Ingredients
1 lb Maryland backfin crabmeat
1 Eggs, beaten
1/4 Finely Chopped Green
Pepper
1 slice White bread, cubed
1 tsp. Worchestershire sauce
1 tsp. Prepared mustard
1 tsp. Lemon juice
1/4 tsp. Salt
1/4 tsp. Pepper
-fat or oil for frying
Crab Cakes preparation:

1. Remove cartilage from crabmeat.
2. In a large bowl, mix well all ingredients except crabmeat and oil, then gently fold in crabmeat.
3. Form into six cakes.
4. Fry in just enough oil to prevent sticking til brown.

Carrot Cake
Ingredients
2 cup Sugar
1 1/2 cup Cooking oil
4 Eggs
3 cup Carrots -- finely grated
1 tsp. Cinnamon -- or to taste
1 tsp. Black Walnut Flavoring
1 tsp. vanilla
2 cup Self-Rising flour
1 cup Black Walnuts Or Pecans -- chopped
1/3 cup buttermilk
1 cup Sugar
1/2 tsp. Baking soda
1 tsp. Light corn syrup
Carrot Cake preparation:

1. By hand mix sugar, oil, and eggs.
2. Add carrots, cinnamon, extracts, flour, and walnuts.
3. Bake for 1 1/2 hrs. at 350° in a tube pan, or a Bundt pan which has been lightly greased.
4. Place a cookie sheet under cake for the baking process.
5. Omit walnut flavoring, if not using black walnuts.
6. If self-rising flour is not used, att 2 tsps.
7. baking soda and 1 tsp. salt. FOR THE GLAZE: Mix all ingredients and bring to a boil.
8. Spoon over hot cake.

Banana Cake
Ingredients
maida - 2 cups
eggs - 2
butter - 1/2 cup
sugar - 1 1/4 cups
buttermilk - 1/4 cup
green bananas - 3
baking soda - 1 tsp
baking powder - 3/4 tsp
vanilla essence - 1 tsp
salt - 1/4 tsp
nuts (optional) - 1/2 cup.

Method
First sieve the maida,baking powder and baking soda.
Add salt to this and keep it aside.
Now put all the other ingredients in the mixie one by one, starting with the butter, sugar.
When the butter and sugar get creamy, add the eggs, buttermilk, vanilla essence and the
bananas(chopped).
Run the mixie until you get a smooth mixture with no lumps.
Now add it to the sieved maida in a vessel.
Fold the mixture and the maida well.
Now pour the batter into a greased and powdered cake tin (8"x8") and sprinkle the
chopped nuts on top.
Bake for 35 minutes at 200 oC. ( the time may differ in different ovens.)
Cool and cut.

Easy Coconut Cake
Ingredients
2 cups flour (maida)
1 cup melted ghee or butter
1 cup water
i cup dry coconut powder
4 tea spoons sugar
i tin condensed milk (300-400 gms)
2 tea spoons of baking powder
1/4 tea spoon of baking soda (meetha soda)
few drops of lemon juice
chopped dry fruits

Method
Sieve the flour, baking powder, baking soda together at least 3 times.
Take a mixing bowl and beat condensed milk, ghee, water and sugar for 5 minutes.
Now mix the sieved ingredients and beat the whole mix for 5 minutes.
In the end mix the dry coconut powder and few drops of lemon juice.
Again beat the whole mix for about 2 minutes.
Pour the mixture into greased pan.
Sprinkle the dry fruits on the top and bake in a preheated oven for about 45-50 minutes at
180oC.
Cool before slicing.
Makes 15- 20 slices.

Tea Cake
Ingredients
Myda -1cup
Margin 200gm
egg-2
sugar-1cup
Soda powder-1pinch
Milk-1/2 cup
cherry- handful.
Dry fruits

Preparation
Mix the myda with beaten egg and sugar. Add some milk. Mix well with margin to form a fine paste. Also add soda powder and mix well. Add the dry fruits. Pour this batter in a microwavable vessel. Decorate the top with cherries. Bake for 5mts. Serve it with tea .

X'mas Cake
Ingredients
1. preserved orange peel (cut into small pieces)- 100gms
raisins-400gms.
finely chopped cashewnuts-100gms.
2. 1/4 cup brandy or rum
3. 4 dsp,sugar 3/4 cup boiling water
4. 225 gms,butter
5. 300gms, finely powdered sugar
6. 4 eggs yolks, 1 tsp. vanilla essence, 1/4 tsp. ground orange peel
7. 250 gms. maida, 1 tsp. baking powder, 1 pinch table salt, 2 pieces cinnamon, powdered 6 cloves, powdered A little nutmeg
8. 1/2 cup milk
9. 4 egg whites
10.1 dsp. lime juice ,3 dsp.sugar
Preparation
Mix the finely sliced preserved orange peel with the dry fruits. Keep this in a vessel. Sprinkle 1/4 cup brandy or rum and keep it for 1 hour to soak. When soaked, close the vessel with a lid and steam it in a steam cooker for 10 minutes. Take the vessel out, remove the lid and allow it to cool.
In a thick-bottomed vessel pour 4 dsp.of sugar and heat.. When it turns dark brown, add 3/4 cup of boiling water and stir without forming lumps. When it is of 1-thread consistency, remove from fire and keep it in a vessel of boiling water so that it does not hard.
Cream butter with the powdered sugar till soft and fluffy. Add the egg yolks one by one, adding essence along with it alternately. Add the orange paste and heat if for a little while. Mix the prepared fruits with the mixture.
Sieve flour, baking powder, salt and other powdered spices together. Mix the flour with the creamed mixture, a small quantity at a time, alternating with a little milk. Repeat this process till all the flour and milk are used up. Add the caramel syrup and mix.
Whisk the egg whites till fluffy. Add the lime juice. Now slowly add the sugar and whisk. Add the fluffy egg white mixture to the batter. Fold in the egg white gradually.
Line a well greased cake tin with paper. Pour the batter into the tin and bake in a preheated oven at 300F slow heat till the cake is ready.

German Chocolate Cake
Ingredients
4 oz Sweet Chocolate
1/2 c Boiling Water
1 c Butter Or Margarine
2 c Sugar
4 Eggs, Separated
1 ts Vanilla
1/2 ts Salt
1 ts Baking Soda
2 1/2 c Sifted Cake Flour
1 c Buttermilk
COCONUT PECAN FROSTING
1 c Evaporated Milk
1 c Sugar
3 Egg Yolks
1/2 c Butter Or Margarine
1 ts Vanilla
1 1/3 c Flake Coconut
1 c Chopped Pecans
Preparation
Melt chocolate in boiling water. Cream 1 cup butter and 2 cups sugar until mixture is light and fluffy. Add 4 egg yolks, one at a time, beating well after each addition. Add chocolate mixture and 1 teaspoon vanilla. Sift together salt, soda and cake flour. Add alternately with buttermilk to chocolate mixture until batter is smooth. Beat egg whites until stiff. Fold into batter. Pour into 3 greased waxed-paper-lined 8- or 9-inch layer cake pans.
Bake at 350øF 30 to 40 minutes. Turn out of pans and cool on racks.
Meanwhile, to make frosting, combine evaporated milk, sugar, egg yolks,butter and vanilla in saucepan. Cook, stirring, over medium heat until mixture thickens, about 12 minutes. Add coconut and pecans and beat until thick enough to spread. Spread between layers and on top of cake

Spice Cake
Ingredients
2 c Flour
1 ts Allspice
1/4 ts Baking Soda
1 ts Salt
1/2 c Sugar
2 x Eggs
2 ts Baking Powder
1/4 ts Nutmeg
1/4 ts Cloves
1/3 c Shortening
1/4 c Molasses
1/2 c Milk
Raisins (if desired)
Method
Sift flour, baking powder, salt, allspice, nutmeg, and cloves together on wax paper. Cream shortening and sugar, then add eggs and beat. Add molasses then add baking soda. Next add flour mixture alternately with milk. Beat well after each addition. Last add raisins if desired. Bake about 40 min. at 350 deg.
