 Simple 1-Person Chai

					   * 4 whole Peppercorns
    * 1 whole Cinnamon Stick (or Half, Depending On The Size)
    * Some Coriander Seeds
    * 3 whole Cloves
    * 4 whole Cardamom Pods (You'll Use The Seeds Inside)
    * 1 teaspoon Assam Tea
    * Hot Water
    * 4 teaspoons Ground, Brown Sugar
    * Some Cream Or Milk
Preparation instructions
Start with getting your water heated up.
While the water’s heating up, coarsely grind all the spices and put them in a tea egg. (Or do what I do: use a small French cofee pot. You know, those where you have to press down that thing? Great for chai.)
Pour the hot water over it and let it brew for 5-6 minutes.
Then take out the tea egg, add the sugar and as much milk or cream as you like (I just love cream).
I realize that the spices for chai are usually cooked together with the water, but if I want to make a quick chai for one person, this way is easier. Also, I prefer my chai without ginger, but if you want to, you can add some of course!
You can also use sweetener instead of sugar, but it’s not the same.

 Homemade Chai Mix

					Homemade  Chai Mix
    * 5 Tablespoons Cardamon Pods
    * 2 Tablespoons Whole Cloves
    * 1 Tablespoon Coriander Seeds
    * 8 sticks Cinnamon
    * ¼ teaspoons Black Peppercorns
    * 1 teaspoon Ground Ginger
Combine all of the ingredients except the ginger in a bowl and crush coarsely in a mortar in manageable batches. If you don’t have a mortar, use a rolling pin, or even easier, pulse briefly in a coffee grinder. Just don’t overdo it—you want pieces, not powder. Stir in the ground ginger and store in an airtight jar.

For one cup of chai: combine 1/2 cup milk, 1 teaspoon chai mix, and 1 teaspoon brown sugar in a Pyrex measuring cup and nuke in the microwave for about 30 seconds, until hot. Let steep for 5 to 10 minutes while you brew the tea. Fill a mug halfway with the tea, and strain the infused milk into the cup. Adjust the amounts of milk and sugar to your preference. Can also be served over ice.
