Beef & Kaya (Raw Banana) Ularthiyathu

Ingredients:
1. Beef – 1/2 kg
For Marination:
2. Kashmiri chilly powder – 1 1/2 tsp
Pepper powder – 1/2 tsp
Coriander powder – 2 tsp
Garam masala – 1/2 tsp
Ginger & garlic – 1 tbsp, crushed
Vinegar – 2 tsp (refer notes)
Salt
Curry leaves
3. Kaya (raw banana) – 2 medium – big
4. Small onion (kinjulli) – 1/2 – 3/4 cup, sliced finely
Ginger & garlic – 1 tbsp, crushed
5. Kashmiri chilly powder – 1 1/2 tsp
Coriander powder – 2 tsp
Garam Masala – 1/2 tsp
Meat Masala – 1/2 tsp (optional)
6. Water – 3/4 cup
Mustard seeds – 1/4 tsp
Curry leaves
Coconut oil
Clean the beef and cut into bite size pieces. Marinate it with the ingredients listed under marination. Keep aside for 10 mins or so. Add 3/4 cup water to the marinated beef and cook till its done. Drain the cooked pieces and keep aside the stock. Cut the raw banana in cubes and cook it with salt & water, till its done. Drain the water and keep aside the cooked raw banana.
Heat oil in a pan & splutter the mustard seeds. Add finely sliced small onion, crushed ginger & garlic & curry leaves. Cook for a few minutes. Add the masala powders and fry till the oil starts appearing, a minute or two. Add the cooked beef & banana to this. Mix well. Add the stock of the beef and again mix well. Do a salt test, and add more if necessary. Cover & cook till the beef pieces & banana cubes are coated well with the gravy. Remove from fire.

Kadachakka and Beef Curry/ Breadfruit and Beef Curry

Ingredients
Beef – 1 kg
Breadfruit – 1
Ginger – 2″ piece chopped
Green chillies – 6 slit
Salt – to taste
Onions – 2 sliced
Garlic – 4 chopped
Curry leaves – 2 sprigs
Tomatoes – 3 medium chopped
Meat masala powder – 3 tsp
Pepper powder – 2 tsp
Turmeric powder – 1 tsp
Garam masala – 1 tsp
Oil – 2 tbsp
Method

Wash and cut the beef into cubes. Transfer it to a pressure cooker and add ginger, green chillies and salt. Pour enough water to cover the beef and cook till done. It takes around 15 to 30 minutes depending upon the beef you are using. Meanwhile, peel and wash the breadfruit and cut it into cubes. Soak them in water, or else they will turn brown. Boil 2 cups of water in a vessel and add the breadfruit to it. Close with a lid and cook on medium flame till they are soft and tender. Heat oil in a pan and saute the onions, garlic and curry leaves. Add the tomatoes and fry till oil separates. Now add all the spice powders and saute till aroma comes out. Pour the cooked beef along with the water into the pan. Also add the cooked bread fruit. Mix well and close with a lid. Let it simmer for 10 minutes till the gravy is thick.

Kappa and Beef Curry

Ingredients
Beef cubes – 1 kg
Tapioca – 1 kg
Giinger – 1″ chopped
Green chillies – 5 slit
Turmeric powder – 1/4 tsp
Salt – to taste
Cardamom – 3
Cinnamon – 2″ piece
Cloves – 4
Onions – 2 sliced
Ginger garlic paste – 1 1/2 tsp
Curry leaves – 2 sprigs
Tomatoes – 3 (medium) chopped
Coriander powder – 2 tbsp
Chilli powder – 2 tsp
Turmeric powder – 1/2 tsp
Pepper powder – 1 tsp
Perumjeerakam/Fennel powder – 1/4 tsp
Oil – 2 tbsp
Method
Put the Beef, ginger, green chillies and salt into a pressure cooker. Add enough water to cover the Beef. Peel and cut the tapioca into big chunks. Wash them well and apply a little salt and turmeric. Place them over the Beef in the pressure cooker. Close the lid and cook till the Beef is well cooked. Open the lid when it is cool and take out the tapioca pieces carefully. Serve them as a snack. Cut the left over tapioca into small pieces and keep aside.
In a non-stick pan, heat oil and add the whole spices. Then add the onions and curry leaves. Fry till golden brown in colour. Add the ginger garlic paste and fry for few seconds. Now add the tomatoes and fry on a medium flame. Add all the powders and fry till the oil separates. Add the cooked Beef along with the left over water. Also add the tapioca pieces and a cup of water. Add more salt if needed and mix well. Close the lid and simmer for about 15 minutes till the gravy is thick. Serve hot!

Beef Stew Recipe

Ingredients:
* Beef(stew meat) - 1 1/2 kg
* Potatoes - 1 cup
* Carrots - 1 cup
* Green peas - 1 cup
* Ginger - A small piece
* Onion(large) - 1 no
* Garlic pods - 6 nos
* Green chillies - 6 nos
* Curry leaves - A few
* Oil - 1 tsp
* Chilly powder - 1 tsp
* Turmeric powder - 1/2 tsp
* Ground pepper - 1/2 tsp
* Coriander powder - 1 tsp
* Ginger-garlic paste - 2 tsp
* Coconut milk - 4 cups
* Vinegar - 2 tbsp
* Salt - As reqd
For grinding:
* Cinnamon(Karugapatta)
* Cardamom(Elakka)
* Nutmeg(Jathikka)
* Peppercorns(Kurumulaku)
* Fennel seeds(Perinjeerakam)
* Cloves(Grambu)
Preparation:
1. Cut stew meat and wash thoroughly. Drain the excess water off
2. Add chilly powder, salt, turmeric powder, pepper powder, ground spices, ginger-garlic paste
3. Pressure cook the meat, till it is done
4. Cut potatoes and carrots into very small pieces
5. Steam the potatoes, carrots and peas with salt
6. Extract coconut milk. Keep the first extract aside
7. Make 2 more extractions
8. Heat oil in a pan
9. Saute curry leaves, green chillies, garlic, ginger and onion
10. Add coriander powder
11. Add the cooked vegetables and fry for a minute
12. Add this to the meat and mix well
13. Add the second and the third extractions of coconut milk
14. Add 1 cup of water and bring to a boil
15. Add the first extracted milk
16. When the sides start boiling, add vinegar. Do not let it boil.
17. Remove from flame
18. Serve hot with appams, rice, chappathi or bread
