Tasty and Healthy Kerala Special Thoran
Banana stem Thoran

Ingredients
2 cups Banana stem (finely chopped)
1/2 cup freshly grated coconut
2 green chillies (slit length wise)
1/2 tsp turmeric powder
salt to taste
For tempering
2 tbsp oil
1/3 tsp mustard seeds
1/2 tsp split black gram dal/urad dal (husked)
2-3 red chillies
handful of curry leaves
a dash of asafoetida
Preparation
It is a little difficult to clean the banana stem. Remove the outer fiberous layer of the banana stem. May be 2 or more layers may be that way. Cut the banana stem in round circular slices. Then cut the slices into smaller pieces. While cutting you can make out the hard pieces to discard. Drop the soft and crisp banana stem pieces in turmeric water so that they do not turn dark in colour. Heat a pan, add oil and temper with the given ingredients. To the tempering add green chillies and banana stem pieces after draining the water completely. Also add turmeric powder, salt, grated coconut and mix well. Cover with lid and cook for 12-15 minutes on low heat. Check to see if the pieces have cooked completely. Remove from heat and serve with rice.

Muringa Poovu (Drumstick flower) Thoran

Ingredients:
* Drumstick flowers 2 cup
* Turmeric pdr 1/2 Tsp
* Coconut 1 cup
* Shallots 2 to 4
* Mustard seeds
* Curry leaves
* Chilly 2 to 5
* Water
* Salt
* Oil
Preparation
Clean the flowers and soak it in turmeric water for 15 mins. Squeeze it well and keep it aside. Grind together coconut, chilly, shallots and turmeric pdr. Heat oil and add mustard seeds. When it splutters, add grounded coconut, curry leaves and salt. Saute it for a few mins and add the flowers. Mix it and sprinkle some water. Cook it in low flame.

Chembu Thal Thoran
Chembu Thal Thoran

Ingredients:
Chembu Thal (Taro Stem) 6 Medium
Grated coconut 1/2 of one
Small Onions 5 – 6 nos
Green Chilly 3 nos
Turmeric Powder 1/4 tsp
Mustard seeds 1 tsp
Red Chilies 2 Bunches
Curry Leaves 2 Bunches
Coconut Oil 2 tsp
Salt for Taste
Preparations:
Peel the skin from the Chembu Thal (Taro Stem) and cut it 2 inch long. Mix the salt with it and squeeze out the thick serum inside and keep it aside. Prepare a thick paste of grated coconut, green chillies, small onions, curry leaves and turmeric powder, mix this with the chopped Chembu thal (Taro Stem).
Heat coconut oil in a fry pan or kadai. Splutter mustard seeds, add red chillies and curry leaves into it. Add the above mix into this, sprinkle a little of water if you feel to and cook for 5 minutes in medium flame. Lower the flame, open the lid and stir it until it get cooked well.

Vazhakoombu cherupayar Thoran

Ingredients:
1 no Banana flower (Vazhakoombu/Kodappan)
½ cup green gram (cherupayar)
1 tsp Cumin seeds
½ of one Coconut
A little Turmeric powder
1 tsp Chilly powder or a few Green chillies
Salt – As required
1 tbsp of Oil
1 tsp of Mustard seeds
2 – 3 broken Dry red chillies
A few Curry leaves
Method:
1)Clean the cherupayar well and get rid of the unwanted stuff from it.
2)Cook it separately with water in a pressure cooker and make sure u don’t overcook it.
3)Remove the first 3 – 4 outer covering of the vazhappoo and chop the rest very finely as u do for thoran.
4)Add coconut oil and turmeric powder into the above chopped Vazhakoombu and mix well the whole thing using your hands to remove the Vazhakoombu's serum.
5)Place together the grated coconut, green chillies, cumin seeds and curry leaves in a mixer bowl and run it once to make it into a coarse form.
6)Mix it along with the chopped Vazhakoombu mixture.
7)Heat oil in a pan and splutter mustard seeds and sauté dry red chillies and curry leaves.
8)Add the Vazhakoombu mixture and mix well.
9)Cover and cook on a low flame.
10)After sometime, remove the cover and add the cooked cherupayar into this and mix well.
11)Continue cooking without the lid on, till done, making sure that it doesn’t get mashed.

Drumstick (Muringakkai) Thoran

Drumstick (Muringakkai) 12
Onion ½ cup cut into small pieces
Green chilli 3 cut fine
Garlic 4 pods
Coconut ½ piece (grated)
Turmeric powder ½ teaspoon
Jeera powder One pinch
Oil 2 table spoon
Curry leaves
One sprig
Salt to taste
Cut drumstick lengthwise into two halves and take out the inside fleshy part with a spoon. Cut it into small pieces. Mix it with green chilli, garlic, onion, grated coconut, jeera, turmeric, curry leaves and salt. Mix well and keep it for 30 seconds.
Heat oil in a separate pan, splutter mustard and put the mixture into it and mix with oil. Cover it with a lid and cook it using low flame for 6 minutes. When it is cooked stir well again for 2 minutes and remove from the flame.

Muringayila Thoran(Drumstick leaves Sprout)

Gredients
Drumstick leaf(muringayila) - 1 cup
Grated coconut - ½ cup
Red chilly powder - ½ spoon
Cumin seeds - ½ spoon
Garlic - 4 pods
Mustard seeds - ½ spoon
Red chilly(half slit) - 2 no s
Turmeric powder - ½ spoon
Coconut oil - 2 spoon
Salt - to taste
How to Prepare:
Wash and drain the water from drumstick leaves and keep aside.
In a mixer grind the grated coconut red chilly powder and garlic pods.
In a pan heat 2 spoons of coconut oil ,when it gets hot add mustard seeds when it gets splutter put the red chilly slit and put the drumstick leaves in this and sauté well in a (simmer mode) only and add salt as required.
When the drumstick leaves get boiled or cooked put the coconut mixture into this and mix well. Turn of the fire and serve it hot with rice.

Idichakka/Young Jackfruit Thoran

Ingredients:
* Unripe jackfruit – 1
* Shredded coconut – 1/4 cup
* Green Chilies – 3
* Coconut oil – 1 tsp
* Olive oil (any oil) – 1 tbsp
* Mustard seeds – 1 tsp
* Split black gram or urad dal – 1 tsp
* Curry leaves – small bunch
* Dry red chilies – 2
* Turmeric powder – 1/2 tsp
* Salt to taste
Method of Preparation:
1. Apply oil in your knife and scrape the skin off the fruit.
2. Cut it into two halves and remove the middle portion of the fruit from both the halves which will be hard.
3. Cut the flesh part into big chunks and pressure cook them for a whistle along with quarter tsp of turmeric powder and half a tsp of salt.
4. If you do not have pressure cooker, microwave it till it becomes tender.
5. Now cool the chunks and pulse it in your mixer grinder or food processor.
6. Remember the chunks should not be overcooked because when you grind the chunks it should be like shredded cabbage (Refer picture).
7. Grind coconut and green chili to form a chutney or sauce.
8. Heat olive oil in a pan and add mustard seeds.
9. Once they splutter, add lentils, dry red chili, curry leaves, ground jackfruit and the chutney.
10. Finally add some salt. Remember, we have already added some salt when we cooked the fruit.
11. Combine them well and cook over medium heat for 5 minutes or till the spices blend together and form the right consistency.
12. Idichakka thoran is ready.

Kerala Cheera Thoran

Ingredients
Red or green Cheera – 4 cups (cleaned and chopped)
Onion sliced – 1 cup (replace with 8-10 sliced shallots)
Fresh Scrapped Coconut – 1 cup or less
Slit green chillies – 2
Dry red chillies – 1
Chilly powder – ½ tsp
Turmeric powder – ½ tsp
Salt – 1tsp ( to taste)
Curry leaves – few
Urad dal – 1tsp
Mustard seeds – 1tsp
Oil – 2 table spoon
Method:
Heat 2 table spoon oil in a pan, splutter mustard seeds, urad ,curry leaves and dry red chillies. Add the onions and chillies, sauté till transparent. Add chilly powder, turmeric powder and salt and sauté for a min. Add half cup coconut and sauté for a min Add the chopped cheera/spinach and sauté well, using a flat pan will make cooking easier as it makes the water content in spinach get evaporated faster and cooks quicker.Cook it open for 3-4 minutes until all the watery content of spinach is evaporated and the spinach is cooked as a dry dish. Finally add the remaining half cup and mix and switch off the flame.Hope you like my version of cheera thoran , adding shallots in place of onions increases the medicinal value and taste. I skip usually due to laziness in peeling the skin of read Indian pearl onions or shallots.
