Potato Fry
Ingredeints
Potato(big) - 2 nos
Turmeric powder - 1/4 spoon
Chilly powder - 1 spoon
Pepper powder - 1/4 spoon
Salt - As reqd
Oil - 1/2 cup

Method
1)Wash the potatoes well and cook them in a cooker.
2)Peel them and cut it lengthwise with around half inch width.
3)Mix the powders & salt in a big bowl & mix it well with potato.
:- Do carefully otherwise potato will get smashed.
4)Keep this for around 1 hour.
5)Deep fry them.

Potato Biscuits
Ingredients
Flour - 3 cups
Baking powder - 2 tbsp
(heaped)
Salt - 1 tsp
Vegetable shortening - 1 cup
Mashed cooked sweet
potatoes - 2 cups
Sugar - 1/2 cup
Milk - 1/4 cup

Method
1)Sift together flour, baking powder and salt.
2)Cut in shortening with fork or pastry cutter.
3)Combine warm sweet potatoes and sugar together.
4)Add milk and mix well.
5)Combine sweet potato and flour mixtures together and blend well.
6)Place on floured surface and roll to desired thickness or about 1/2 inch thick. Cut with biscuit cutter.
7)Bake on lightly greased baking sheet at 400 degrees for 10 minutes.
Yields 2 to 3 dozen.

American Brownies
Ingredients
Butter(melted) - 1/2 cup
White sugar - 1 cup
Eggs - 2 nos
Self-rising flour - 1/2 cup
Unsweetened cocoa powder - 1/3 cup
Salt - 1/4 tsp
Vanilla extract - 1 tsp
Walnuts(chopped) - 1/2 cup (optional)

Method
1)Preheat oven to 350 degrees F (175 degrees C).
2)Grease and flour an 8x8 or 9x9 inch baking pan.
3)In a medium bowl, beat together the butter and sugar.
4)Add eggs and mix well.
5)Combine the flour, cocoa and salt.
6)Stir into the sugar mixture.
7)Mix in the vanilla and stir in walnuts, if desired.
8)Spread evenly into the prepared pan.
9)Bake for 25 - 30 mins in the preheated oven or until edges are firm.
10)Cool, before cutting into squares.

Babycorn Snack
Ingredients
Babycorn - 1 pkt
Salt - As reqd
Pepper powder - As reqd
Butter - 2 tbsp
Method
1)Wash the babycorn well.
2)Sprinkle some salt on top and pressure cook it upto 2 whistles.
3)Heat butter in a pan.
4)Add the corn to it and stir well.
5)Sprinkle pepper powder on it.
You can also add cooked mushrooms to it.
Serve hot.

Banana Fry
Ingredients
Ripe Banana(not over ripe) - 1 no
(cut Into small pieces)
Ghee for frying
Sugar for sprinkling
Method
1)Cut banana into small pieces.
2)Heat some ghee in a frying pan.
3)When it is hot, put the banana pieces in it.
4)When it becomes light golden brown, sprinkle sugar on the top.
5)Cook till it becomes a little more brown and then remove from fire.
Serve hot.
Tasty and healthy snack for kids and for adults too who aren`t worried about calories.

Bread Cutlet
Ingredients
Bread slices - 10 - 12 nos
Onions(big) - 2 nos
(finely chopped)
Green chillies - 3 - 4 nos
(finely ground)
Curd - 1 - 1 1/2 cups
Chilly powder - 1 tsp
Salt - As reqd
Oil for frying
Method
1)Cut the crust of the bread on all 4 sides and break it up into small pieces.
2)Mix together onions, green chilly paste, curd, chilly powder and salt.
3)Mix the bread with the above paste so that all ingredients are mixed well.
4)Make small flattened balls as in cutlets in any desired shape.
5)Heat oil in a pan or a kadai.
6)Deep fry on both sides, until golden brown.
Serve hot with tomato sauce.
Can include shredded chicken or fish for non-vegetarians.

Chilly Baji
Ingredients
To make 4 bajjies:-
Chilly Bajjies(large) - 4 nos
Gram flour(Kadalamavu)- 400 gms
Chilly Powder - 50 gms
Salt - To taste
Tamarind
(To be filled inside the chillies)
Asafoetida powder(Kayam)- As reqd
Water - As reqd
Oil for deep frying
Method
1)Mix gram flour, chilly powder, salt and asafoetida in water to prepare a smooth batter.
2)Make a small hole on the chilly to fill the tamarind.
3)Dip the chillies in the batter.
4)Fry them in the oil till they become golden brown

Baked Vegetable Cutlet
Potatoes(medium) - 2 nos
Beans - 5 - 6 nos
Green peas - 1/2 cup
Carrot - 1 no
Beetroot(small) - 1 no (optional)
Corn flour - 2 tbsp
Dry mango powder(Amchoor) - 1/2 tsp
Oil - 1 tbsp
Red chilly powder - As reqd
Salt - As reqd
Coriander leaves - 1/2 cup
(finely chopped)
1)Cook potatoes and beetroot in a pressure cooker.
:- It should not be too watery.
2)Cook other vegetables separately in the pressure cooker upto 1 whistle.
3)Mash them lightly.
4)Add all the other ingredients and mix well.
5)Shape as desired into medium sized cutlets.
6)Place in greased aluminium foiled tray and bake in broil mode, till brown.
:- It may take 20 - 30 mins.
:- Serve hot with chutney or ketchup.

Murukku
Rice - 1/2 kg
Urad powder
Asafoetida(Kayam) - 1/4 tsp
Sesame seeds(Ellu) or cumin seeds
(Jeerakam) - 2 tsp
Butter - 4 tsp
Salt - 1 tsp
Oil for frying
1)Soak the rice in water for 2 hours.
2)Wash and drain fully.
3)Spread it on a large piece of cloth or paper and allow it to dry.
Note: Do not dry it completely.
4)Grind it into a very nice powder and sieve this flour.
5)Add urad powder in the ratio 8:1.
6)Add salt, asafoetida, sesame seeds or cumin seeds and butter.
7)Mix well by adding little water and make it into a soft dough.
8)Using this dough, make murukkus on a sheet of newspaper(it absorbs the water) by rolling spirally to get the desired shape. Grease your hand with coconut oil to get the shapes. Leave it to dry (it should not dry too much nor it should be too watery).
9)Heat oil in a frying pan and deep fry, turning occasionally.
10)Remove the murukkus when the sound of murukku in oil become silent. These can also be made using ready-made murukku plates.

Pakkavada
Ingredients
Roasted gram flour - 3 cups
Roasted rice flour - 1 cup
Red chilly powder - 2 tsp
Asafoetida(Kayam) powder - 1 pinch
Salt - As reqd
Ghee - 1/2 tbsp
Oil for frying
Method
1)Mix the flour with chilly powder, asafoetida powder and salt.
2)Add the ghee and mix well.
3)Knead the above to a smooth dough using hot water.
4)Press it through the ribbon mould of a seva press into hot oil and fry it till golden brown.
5)Drain off the excess oil on a kitchen towel.
