Italian Salad Recipe
Ingredients
1 cup cooked macaroni cut in small rings
½ cup diced celery
2/3 cup finely diced carrot
½ cup cooked green peas
2 teaspoons grated onion
Mayonnaise or boiled dressing
Instructions
Mix all ingredients, season with dressing, and serve on a lettuce leaf

Omelet With Italian Squash Recipe
Ingredients
3 eggs, beaten
1/3 Italian squash, peeled, sliced thin
2 tablespoons butter
Flour
* 1 tablespoon cream
* 1/4 teaspoon salt
A dash of white pepper or paprika
Instructions
Season the Italian squash.
Dredge in flour.
Fry in the butter in frying pan for about 2 minutes.
Pour in the beaten eggs.
Follow the directions for a plain omelet.

Veal Or Pork Chops, Italian Recipe
Ingredients
6 good sized veal or pork chops
2 cups canned or fresh mushrooms
2 tablespoons vinegar
1-½ cups water
2 cloves
Few grains mace
½ teaspoon salt
2 tablespoons corn oil
1 teaspoon corn syrup
1 tablespoon Argo or Kingsford's Cornstarch
½ cup canned tomato
½ tablespoon lemon juice
Instructions
Italian Recipe, Broil the chops as usual.
In the meantime cook the mushrooms five minutes in the vinegar and water with the cloves, mace and salt.
Then slice, put in a saucepan with the corn oil and corn syrup, cook five minutes, add the cornstarch, the tomato, lemon juice and season to taste with salt and pepper.
Put the chops on a platter, pour the sauce over and serve with boiled rice.

Italian Sorbet Recipe
Ingredients
4 cups water
2 cups sugar
1½ cups orange juice
1½ cups grape fruit juice
½ cup lemon juice
¼ cup wine
Instructions
Make a syrup by boiling water and sugar fifteen minutes; add orange, grape, and lemon juice; cool, strain, add wine, and freeze to a mush, using equal parts ice and salt.
If fresh fruit is used, more sugar will be required.

Italian Beets Recipe
Ingredients
½ cup butter
1½ teaspoons salt
½ dozen medium sized beets
2/3 cup lemon juice
3 cups hot water
1/3 cup flour
Instructions
Wash the beets, and put into boiling water.
Cook from one to four hours, or until the skins will loosen from the beet.
Put into cold water, and remove the skin.
Cut the beets lengthwise through the center in about eight pieces.
Make a sauce of the remainder of the ingredients given above.
Mix the flour and three-quarters of the butter; add the hot water slowly, stirring constantly.
Cook five minutes, and then add salt, remaining butter, and the lemon juice.
Turn the beets into this sauce, and when thoroughly reheated, serve.

Italian Meringue Recipe
Ingredients
½ cup sugar
¼ cup water
1 tablespoon gelatine or
¼ teaspoon granulated gelatine
Whites 3 eggs
1 cup thin cream
½ tablespoon vanilla
Instructions
Make syrup by boiling sugar and water; pour slowly on beaten whites of eggs, and continue beating.
Place in pan of ice-water, and beat until cold; dissolve gelatine in small quantity boiling water; strain into mixture; whip cream, fold in whip, and flavor.

Italian Fritters Recipe
Ingredients
* 1 egg
* 1 cup milk
* Grated rind 1 lemon
* 2 tablespoons vegetable shortening
* 5 slices stale cake
* ½ teaspoon powdered cinnamon
* Sugar and few grains salt
Instructions
1. Cake should be about a 1/4 of an inch thick, not less.
2. Cut out into oval or round shapes with cutter.
3. Beat egg, mix with milk, lemon rind, salt, and about 1 teaspoon sugar.
4. Lay slices of cake in this custard until they are soft, but not crumbly; time will depend upon how stale cake is.
5. Heat 1/2 vegetable shortening in frying pan, lift few pieces of cake up carefully and lay them in hot vegetable shortening.
6. Brown 1 side, then turn them over and brown other side also.
7. Add some pieces of vegetable shortening as required.
8. Mix cinnamon with 2 teaspoons sugar and sprinkle some of these over each fritter.
9. Serve with hard sauce.

Macaroni, Italian Style
Ingredients
* ½ cup of cooked macaroni ¼ teaspoon of paprika
* ½ cup of rich broth flavored
Instructions
1. Italian Style Recipe 1, 1 1/2 tablespoons of butter with onion, carrot, etc.
2. 1 1/2 tablespoons of flour 1/4 cup of tomato puree
3. 1/4 teaspoon of salt 1/4 cup of grated cheese
4. Make a sauce of the butter, flour, seasonings, broth, and tomato.
5. To the sauce add the cooked macaroni and the cheese; lift the macaroni with a fork and spoon to mix the ingredients thoroughly, cover and set over hot water to become very hot.
