Sugar Free Pineapple "Preserve"
1 envelope (1 tablespoon) plain gelatin
3/4 cup canned unsweetened pineapple juice
One 20-ounce can of unsweetened crushed pineapple, undrained
Optional: sugar substitute to taste
Sprinkle gelatin on canned pineapple juice (don't use fresh or frozen). Wait one minute until gelatin softens, then heat gently until melted and clear.
Remove from heat and stir in undrained, canned crushed pineapple. Sweeten to taste, if desired. Transfer to covered jars and store in the refrigerator.
Makes approximately 2 1/2 cups, 15 calories per tablespoon.

Sugar-Free Pecan Pie
Ingredients
1/3 C. water
2/3 C. granular fructose
2 (0.8-ounce) packages sugar-free vanilla pudding (not instant)
3/4 C. evaporated skim milk
2 extra-large eggs
1 unbaked 9-inch pie shell
1/4 C. chopped pecans
1/2 C. Grape-Nuts cereal
Method
Preheat oven to 350° F.
Combine water and fructose and simmer over low heat 5 minutes, then cool.
Mix dry pudding into fructose mixture. Add skim milk and eggs and blend well.
Pour into pie shell and sprinkle pecans and Grape-Nuts on top.
Bake for 30 minutes, until top is firm. Cool 3 hours before slicing.
Makes 8 servings.

Cinnamon Rice Pudding
Ingredients
1/2 cup rice
1 cup water
1 tablespoon fat free milk
2 tablespoons raisins
1 teaspoon low calorie margarine
1/2 teaspoon sugar
1/4 teaspoon cinnamon
Method
In a small saucepan, bring rice, water, milk and raisins to a boil, stirring occasionally. Lower heat, cover tightly, and cook 15 minutes on low until liquid is absorbed and rice is tender. Mix sugar and cinnamon together and sprinkle over rice to serve. 2 servings.

Sugar Free Sweet Fruit Salad
Ingredients
3 or 4 large apples, diced with peels left on
4 or 5 bananas, sliced
Other fruits as desired: peaches, pears, grapes work well
2 large cans fruit cocktail (lite, no sugar added, or in its own juice varieties)
1 regular can crushed pineapple
1 tub of Crystal Light lemonade
1 package of Jello-brand sugar-free vanilla pudding
Method
Mix all items together in a large mixing bowl. Do not add anything to the lemonade or pudding powders; the powder itself is all that is needed to go along with the other ingredients above.
Chill and serve.

Banana Pudding
Ingredients
1 box vanilla wafers
Bananas
4 cups 2% milk, divided
3 boxes sugar-free vanilla instant pudding
Cool Whip
Method
Line bowl with vanilla wafers, then top with sliced bananas.
Mix 1 1/3 cups 2% milk and 1 box sugar-free vanilla pudding and pour over wafers and bananas. Make 3 layers this way, using 1 box of pudding at time as it sets up very quickly. Top with Cool Whip.

Tomato Sauce
Ingredients
1 (35 ounce) can Italian tomatoes
1 (6 ounce) can tomato paste
1 bay leaf
1 teaspoon oregano
1 1/2 teaspoons basil
1 large clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 peeled carrot
2 tablespoons chopped green pepper
Method
Combine all ingredients in a heavy saucepan. Bring to a simmer, then simmer uncovered for 30 minutes. Remove and discard carrot.

Green Tomato Jam
Ingredients
2 cups ground green tomatoes
1 small package sugar-free gelatin
Liquid sugar to equal 1 1/2 cups sugar
Method
Bring tomatoes to a boil and cook for 10 to 15 minutes. Remove from heat and add sugar substitute and sugar-free gelatin. Pour into 3 or 4 jars and refrigerate.
