Grilled Cheese Bread Delight
Ingredients
6 slices bread (brown or white)
3 thick slices cheese (of thesize of bread)
1/2 tsp. crushed red chilli
salt to taste
blob of butter
Method
1. Place 3 slice side by side.
2. Place a slice of cheese on each.
3. Sprinkle chilli and salt on each.
4. Cover with second piece of bread.
5. Cut each into quarters.
6. In small skewers, push 2 quarters, each.
7. Drizzle all with a little butter.
8. Grill over the hot coals of a barbeque or in an oven.
9. Serve hot with ketchup.
Making time: Preparation: 15 minutes, Roasting:10 minutes
Makes: 3 servings bowl
Shelflife: Best hot and crisp.
Variations: Add some marinated veggies in between two sandwiches. Drizzle some ginger or garlic water over before roasti

Grilled Pankies
Ingredients
1/2 cup rice
12 cup yellow dal
1 tbsp. urad dal
1 cob corn grated
1 onion grated
1 tbsp. curds
2-3 pinches soda bicarb
1 tbsp. oil
salt to taste
1 large banana leaf
Method
1. Wash and soak rice and dals for 3 hours.
2. Grind to a smooth thick batter.
3. Add soda and salt, keep aside overnight.
4. Add grated vegetables, mix well.
5. Cut banana leaf into 2"x 2" squares
6. Grease each on of them.
7. Place a ladleful of batter on one piece.
8. Cover with another piece and press very lightly.
9. Repeat with remaining batter.
10. Place each leaf sandwich on a hot thick griddle, and cook for 2 minutes.
11. Flip and cook other side.
12. Remove as for steamed ones.
13. To eat, peel of banana leaf sections, and eat soft panki.
14. Serve hot with chutney or ketchup, as desired.
Making time: 15 minutes (excluding soaking and grinding time) Makes: 7-8 pankis Shelflife: Best fresh, batter refrigerated 1 day

Grilled Bread Cups
Ingredients

1 cup onion finely chopped
1 sprig spring onion finely chopped
1 cup chickpeas soaked overnight & pressurecooked till soft
1 cup cold milk
1 tbsp. plainflour
1 tsp. chaat masala
1/4 tsp. crushed red chilli
1/2 tsp. pepper powder
salt to taste
1 1/2 tbsp. butter
1 cup cheese grated (processed or mozarella)
1 6 cup muffin tray or other heatproof moulds
Method
1. Wash and soak rice and dals for 3 hours.

Grilled Apple Toast
Ingredients
4 Bread Slices, thick
60 gms. Butter
4 round Apple Slices
4 tsps. Mango Chuntey
4 tsps. Grated Cheese
Salt & Pepper to taste
Coriander Leaves
Green Chillies
2 tblsps. Milk
1 small Onion cut into small pieces
1 small Tomato cut into small pieces
For the Mango Chutney
1. 1 green mangoes, Jaggery, Salt, Red chillies powder, salt, 1 small onion
2. Slice the mangoes and onions
3. Grind in the mixture all the ingredients.
Method
1. Put the bread slices in a toaster to make light toasts.
2. Remove the central portion of the Apple, also the skin.
3. Make 4 round slices of the apple.
4. Add to the grated Cheese, Salt, Pepper, Coriander Leaves, Chopped Green Chillies and 2 tblsps. of Milk to make a paste.
5. Then put in Onion and Tomato, chopped fine.
6. Apply a little butter on the toasts.
7. Then spread mango chutney and put apple slices.
8. Apply a dash of cheese paste, and bake lightly in oven to a rosy colour.

Carrot Grilled Toast
Ingredients
1/2 cup carrot grated
2 green chillies, finely chopped
1 pod garlic, crushed
1 onion, finely chopped
1/4 tsp sugar, salt to taste
2 tbsp butter, softened
4-5 slices sandwich or brown bread
2 tbsp grated cheese
Method
1. Mix all ingredients into the butter.
2. Apply mixture liberally on one side of each slice.
3. Heat griddle and place the slices butter side down, on low flame.
4. Toast till done, flip on the other side, toast till brown.
5.Sprinkle cheese and cut into triangles.
6. Serve hot and crisp with hot tomato soup or ketchup.

Grilled Toast with Pizza
Ingredients
10 slices sandwich bread
1-1/2 cups cheese grated
2 tbsp. coriander leaves finely chopped
butter for bread slices
For 2 cups pizza sauce:
1 cup tomato puree
1/2 cup onions finely chopped
2 tbsp. tomato ketchup
8-10 flakes garlic
1/2 tbsp. sugar
1/2 tsp. red chilli crushed
1/4 tsp. omam (oregano) seeds
1/4 tsp. cinnamon clove powder
2 tbsp. cornflour
2 tbsp. butter
salt to taste
Method
For pizza sauce:
1. Slice the onions and capsicum for topping into thin round slices. Keep aside.
2. Heat butter. Add chopped onions. Stir fry for 2-3 minutes.
3. Add tomato puree, bring to a boil.
4. Pound together garlic, chilli powder, salt, clove-cinnamon powder.
5. Add all ingredients except cornflour, simmer for 5 minutes.
6. Mix cornflour in 1/2 cup water to make smooth paste.
7. Add to the boiling sauce, stirring continuously to avoid lumps.
8. Stir and cook till thick enough to spread on pizza bread.
9. Cool, stirring occasionally, to avoid surface from drying up.
10. Keep aside:
1. Arrange buttered bread slices on a grilling tray.
2. Srpead a tbsp. of sauce or more to cover slice.
3. Sprinkle some cheese and coriander over it.
4. Put under a hot grill till cheese melts and toast is crisp.
5. Serve warm with ketchup and crushed red chillies.
Making time: 30 minutes
Makes: 10-12 toasts
Shelflife: Best fresh after grilling. Sauce may be stored in the freezer for further use.

Grilled Mushroom Toast
Ingredients
4 bread slices, buttered
1-1/2 cup sliced mushroom
1/4 cup meat pieces
1/4 cup shredded cheese
2 onion, thinly sliced
4 tbsp mayonnaise
Salt as per taste
1/4 tsp pepper powder
few mint leaves, chopped
2 green chillies, chopped finely
1 tbsp butter
Method
1. Fry meat pieces till crisp
2. Crumble them
3.Saute mushroom in butter for 3-4 mins
4. Drain and keep aside
5. In mayonnaise mix salt, pepper, chillies
6. Place bread slices in baking tray
7. Spread mayonnaise over it
8. Top it with mushroom slices
9. Sprinkle meat crumbles
10. Top it with onion slices
11. Garnish with shredded cheese and min leaves
12. Bake at 350 o c for 10 mins.
13. Cut the toast into halves and serve with french fries
