    Applesauce Kugel

    Ingredients

    1 lb wide noodles
    4 eggs
    2 Tbsp sugar
    1/2 tsp vanilla extract
    1/2 cup melted margarine
    1/2 cup raisins
    2 cups applesauce
    cinnamon and sugar

    Method

    Cook noodles until nearly tender and drain. Beat eggs with a fork and add the sugar, vanilla, margarine, raisins, applesauce and noodles, mixing well.

    Pour into a large greased baking dish. Combine some cinnamon and sugar and sprinkle on top.
    Bake at 350 F/175 C for 1 hour or until browned on top.

    Default Cheesy Potato Kugel

    Cheesy Potato Kugel

    Ingredients

    * 3 pounds peeled and shredded potatoes
    * 4 eggs
    * salt and pepper to taste
    * 5 tablespoons olive oil
    * 1 onion, chopped
    * 2-1/2 cups Cheddar cheese, shredded


    Method

    Preheat oven to 350° F (175° C). Grease a 9 x 5-inch loaf pan. Place potatoes in a colander and squeeze out moisture.

    In a large bowl combine eggs, salt, pepper, oil and onion. Place potatoes and cheese in the bowl and mix well. Pour mixture into the prepared loaf pan.

    Bake at 350° F (175° C) for 1 hour. Raise heat to 450° F (230° C) and bake for 5 to 10 minutes until browned, serve hot.

    Makes one 9 x 5-inch loaf

    Pineapple Kugel

    Ingredients


    * 1 pound broad egg noodles
    * 1 cube butter or margarine melted
    * 5 eggs (save half for topping)
    * 1/2 cup sugar
    * 1 1/2 cups crushed corn flakes, for topping
    * 1 12-ounce carton sour cream
    * 1/2 pound dry cottage cheese
    * 1 20-ounce can crushed pineapple, well drained

    Method
    Cook and drain noodles until slightly under done. In a large bowl, combine eggs, sour cream, cottage cheese, pineapple and half the melted butter. Mix well and add noodles. Mix until well coated.

    Butter a large casserole (9x12x2) and empty contents of bowl into it.

    Mix the crushed corn flakes with butter and sprinkle on top. Bake in a 350 degree preheated oven for about an hour.

    Caramel Kugel

    Ingredients

    * 6 tablespoons melted butter
    * 1/2 cup sugar
    * 2 cups milk
    * 1 cup sour cream
    * 1 teaspoon vanilla
    * 16 ounces cottage cheese
    * 16 ounces cream cheese
    * 1/2 teaspoon salt
    * 6 eggs
    * 8 ounces cooked egg noodles
    * 4 tablespoons butter melted with 1/2 cup brown sugar

    Method

    Preheat oven to 350 degrees.

    Mix together all ingredients except noodles and butter/brown sugar mixture.
    Beat until mixture is very smooth and thin. Add the cooked egg noodles and pour
    mixture into a lightly greased 9 x 12" baking pan.

    Bake for 45 minutes, or until it BEGINS to set. Then, using a large
    spoon, insert spoonfuls of the melted butter/brown sugar mixture into
    the pudding.

    Bake for another 15 minutes or until the kugel looks firm. 8-10 servings

    Sweet Carrot Kugel

    Ingredients

    * 3 large eggs, separated
    * 5 tablespoons sugar, divided
    * 3 tablespoons flour
    * 4 medium carrots, peeled and grated (about 1 2/3 cup)
    * 1 tablespoons plus 1 teaspoon sweet red wine
    pinch of salt
    * 2 teaspoons lemon juice
    * 1/4 cup blanched ground almonds
    * 1 3/4 teaspoon grated lemon rind
    * 4 tablespoons matzo meal

    Method

    Preheat oven to 350°F. Grease a 9 x 9 baking dish.

    Beat egg yolks with 3 tablespoons of the sugar in large bowl about 2 minutes or until thick and light. Stir in grated carrots, almonds, matzo meal, flour and salt. Add wine, lemon juice and lemon rind and mix well.

    In a separate bowl, beat egg whites until stiff but not dry. Add remaining 2 tablespoons of sugar and continue beating at high speed for 30 seconds or until glossy.

    Fold one quarter of whites quickly into carrot mixture. Spoon this mixture over remaining whites and fold together quickly but lightly. Transfer to prepared baking dish and bake for 35-40 minutes or until firm and golden brown. Serve hot or warm.
