					 Gingered Chicken Stir Fry 
 
 Ingredients
 
 1 pk Country Pride Boneless-Chicken Tenders
 1 11 oz can mandarin oranges
 1 ts Grated fresh ginger or 1 1/2 -tsp. ground ginger
 1 tb Cooking oil
 1/4 lb Snow peas or 1 - 16 oz. pkg -frozen snow peas
 1/4 c Oriental Stir Fry Sauce
 4 Servings hot cooked rice
 
 Preparation
 
 Cut Country Pride Chicken Tenders in half. Drain oranges;reserve 1/2 cup syrup.Cook ginger in hot oil 30 seconds. Add chicken and stir fry about 3 minutes. Add snow peas,reserved syrup and stir fry sauce. Heat to boiling, stirring.Reduce heat, cover and cook 2 minutes. Top with orange sections.
 Serve over rice.

					Caribbean Chicken Salad
 
 Ingredients
 
 2 c Cooked chicken or turkey,diced
 3 c Cooked rice, cooled
 1 c Celery, finely sliced
 1/4 c Green pepper, chopped
 1 ts Curry powder
 8 oz Pineapple,crushed,unsweetened
 2 tb Pimiento, sliced
 1/2 c Yogurt, nonfat
 1/4 c Mayonnaise
 1 1/2 tb Lemon juice
 1/2 ts Salt
 1/4 ts Pepper
 
 Preparation
 
 Combine chicken, rice, celery, green pepper, pineapple and pimiento. In small bowl or jar, blend remaining ingredients.Stir vigorously or shake to blend. Pour over chicken mixture.Toss lightly until well mixed.Chill.

					 Lemon Chicken
 
 Ingredients
 
 3 lb Chicken pieces
 3/4 c Lemon juice
 Flour for dredging
 1/2 ts -Salt-Pepper
 1/4 c Vegetable oil
 1/2 c chicken stock
 1 tb lemon juice
 1 lemon sliced thin
 3 tb brown sugar
 
 Preparation
 
 Combine chicken and lemon juice. Marinate at least 6 hours or overnight, turning occaisionally. Remove chicken, discard marinade,reserving 1 Tbsp. Combine flour, salt and pepper; dredge in flour (this step may be skipped). Heat oil in large skillet over medium-high heat, fry in several batches. Transfer to casserole large enough to hold chicken in single layer. Combine peel and brown sugar in bowl, sprinkle over chicken. Combine stock and 1 Tbsp reserved marinate, pour around chicken.
