Spinach Salad
Ingredients
2 cups chopped spinach
1 egg
Salt as per taste
pepper as per taste
3 tbsp chopped spring onion
1 tbsp lemon juice
2 tbsp chopped mint
Method
1. Hard boil egg for 4 mins
2. Make small chunks of egg
3. Add to spinach
4. Toss it with remaining ingredients
5. Serve with slices of raw vegetables

Chana Salad
Ingredients
Chana 50 gms
Capsicum 1
Onion 2 (thinly sliced)
Tomato 1 (big with seeds removed and thinly sliced)
Dressing
Mint leaves
Garlic 5
Coriander leaves
Green Chilli 3 (if needed you can add as you want)
Lemon Juice
Salt to taste
Mustard powder (if there)
Olive Oil 2 tsp
Hot Water 2 spoon
MIX THE ABOVE IN A BLENDER.
Method
Boil the chana with salt. Add capsicum, onion and tomato and mix them. Keep it in fridge till required. Add the dressing before 10 minutes of serving.

Sprouted Salad
Ingredients
Moth 25 gms
Rajma 25 gms
Channa 25 gms
Macroni half a cup
Lemon 1
Green Chillies 2
Carrots, chopped one cup
Cauliflower, chopped half a cup
Cucumber , chopped one cup
Salt 1/2 spoon
Olive Oil 1 spoon
Vinegar 1/2 Spoon
Fresh Cream 2 spoons.
Method
1. Soak moth, rajma & Channa for 4 hrs, then tie them in a soft cotton cloth for 6-7 hrs keep it at a warm place.
2. Boil macroni for 3 minutes & drain out the water.
3. Place all the chopped vegetables together & mix with the sprouted Moth, Rajma, Channa & Macroni.
4. Beat cream, olive oil & vinegar together & dress the salad with it. Add salt & lemon juice & mix well.
5. Present it on a plate covered with a cabbage leaf & decorate it with green chillies & mint (Pudina ).

Tasty Salad
Ingredients
1 can of chick peas
1 can of pinto beans
1 can of peanuts
1 can of corn
1 green pepper
1 red pepper
1 yellow pepper
1 orange pepper
2 tsp Chat masala
2 tblspn Vinegar
Salt
Method
1. Boil the chick peas, corn, and peanuts. Cut the peppers in bite size pieces.
2. Add everything together and add vinegar and salt to it.
3. You can add more or less vinegar and salt according to your taste.
4. Let it soak for more than 3 hours and till everything is soaked in vinegar.
5. Now take out vinegar and excess water from the mixture.
6. Add boiled peanuts to it and add chat masala according to your taste.
7. This is a very tasty salad and also healthy.
8. You can add any other stuff to it if you want.
9. Don't add peanuts if you are too much concious about cholestrol and fat.
10. Other than peanuts, this is a healthy and diet food.
11. This measurment will make around 4-5 medium sized bowls of salad.
12. Choose quantity on your own if you like.

Lentil Salad
Ingredients
1 1/2 cup sprouted lentil (moong, channa, any)
1 large onion chopped
1 large tomato chopped
1/2 bunch coriander chopped.
few mint leaves chopped.
1 tsp. vinegar white
salt to taste
1 tsp. ground sugar
1/2 tsp red chilli powder
1/2 tsp cummin seed powder
Method
Wash and drain the sprouts. Add the onion, tomatoes and all seasoning.
Mix well, add mint an mix lightly garnish with chopped coriander.
Chill and serve.

Apple and Raisin Salad
Ingredients
golden apple - 1 cup, chopped (do not peel)
red apple - 1 cup, chopped (do not peel)
carrot - 1 cup, coarsely grated
cooked rajma (red kidney beans) - 1 cup
spring onion - 1 cup, chopped
lime juice - 2 tbsp
raisins - ½ cup
honey - 2 tbsp
olive oil - 2 tbsp
sesame seeds - 3 tbsp, roasted
freshly crushed black pepper
salt to taste
Method
1. Mix both the apples together and toss in the lime juice.
2. Combine it with raisins, carrot, chick peas and spring onion.
3. Prepare a dressing by mixing together, honey, olive oil, salt and pepper.
4. Pour it over the salad and sprinkle roasted sesame seeds on top.

Green Papaya Salad
Ingredients
1 medium raw papaya, peeled, seeded
5 small spring onions with greens
5-6 tender french beans chopped 1" long pieces
1/2 cup raw peanuts coarsely pound or crushed
2 flakes garlic peeled, crushed
1 stalk lemon grass finely chopped
2 fresh red chillies, finely chopped
1 tomato, inner seeds removed, thinly slivered
1 tbsp. soya sauce
1 tsp. sugar
salt to taste
Method
1. Either slice papaya into inch long thin wafers, or grate coarsely.
2. Parboil beans till slightly tender, but not overcooked.
3. Chop spring onion greens finely, and scallions to thin slivers
4. Mix all ingredients, tossing with a wooden spatula, to blend well.
5. Keep covered and refrigerated for 15-20 minutes, before serving.
6. Serve as a crisp fresh salad, garnish with chilli or onion flowers.

Grape, Apple & Capsicum Salad
Ingredients
250 gms - seedless black and green grapes
½ - apple, diced
1 - medium capsicum
2 tsp - mint leaves, finely chopped
1 tbsp - golden or treacle syrup
1 tsp - vinegar
1 - tiny green chilli, finely chopped
1 tsp - mustard paste
1 tbsp - eggless mayonnaise
1 tbsp - sesame seeds
1 tsp - light olive oil
Method
1. Roast capsicum over direct flame till skin charrs.
2. Place inside a plastic bag, to ‘sweat’.
3. Rub skin till black portion is removed.
4. Do not wash off of flavour will be lost.
5. Chop grapes into half vertically.
6. Dice apple into cubes.
7. Put all ingredients, other than fruit, and sesame seeds, in a small bowl.
8. Whip with a small balloon whisk till opaque and frothy.
9. Put fruit in a large salad bowl, sprinkle sesame over them.
10. Pour prepared dressing over fruit, toss lightly to blend flavours.
11. Serve cold and garnished with salad leaves or coriander.

Fruit Salad
Ingredients
1 Apple
1 Orange
2 Bananas
1 Small tin of pineapples
1 Mango
1 small tin of nestle cream
sugar(Optional)
5-6 Almonds
Method
1. Keep almonds soaked in water for 3-4 hours.
2. When turned soft, cut almonds into fine thin slices.
3. Cut all the fruits into small pieces.
4. Mix the fruits well with cream.
5. Take the salad out in a bowl and decorate it with almonds and serve.

Banana Salad
Ingredients
2 ripe firm bananas
2 rip firm tomatoes
1 tbsp. fresh coriander finely chopped
3-4 fresh mint leaves finely chopped
2 tsp. lemon juice
1/2 tsp. cumin powder
1/4 tsp. red chilli powder
2 tsp. sugar powdered
Salt to taste
3-4 pinches black salt (optional)
Method
1. Save aside half coriander for garnish.
2. Chop bananas, sprinkle lemon juice, toss lightly.
3. Chop tomatoes, add all other ingredients.
4. Add bananas.
5. Toss gently with a flat spoon.
6. Chill if desired.
7. Garnish with remaining coriander.
8. Serve as is or with chappati or toast.
