    Parmesan Waffle Fries recipe

    Ingredients:
    1 (22 ounce) package frozen waffle-shaped French fries
    2 tablespoons Parmesan cheese
    1 teaspoon Italian seasoning
    1 tablespoon parsley
    1 teaspoon salt
    1/4 teaspoon pepper
    1-2 tablespoons oil

    Preparation:
    1. Heat the oven according to package directions and cook the French fries until crisp.
    2. While the fries are baking, in a small bowl, combine the dry seasonings and just enough oil to make a thin dressing (approximately 1-2 tablespoons).
    3. When the fries are done, toss immediately with the oil and herb mixture. Drain any excess oil and serve immediately.

    Ham and Swiss Cheese Pinwheels recipe

    Ingredients:
    1 (8 ounce) can refrigerated crescent dinner roll
    2 tablespoons Swiss cheese, grated
    8 ounces ham steak, small diced
    1/4 cup cream cheese, spreadable light type
    2 tablespoons no-fat sour cream
    1 tablespoon dill pickle relish
    1 teaspoon grainy mustard
    1/2 teaspoon of your favorite hot sauce

    Preparation:
    1. Preheat the oven to 375 degrees F.
    2. Unroll the crescent roll dough on a lightly floured surface; pinch together the perforations.
    3. Roll the dough to about 12×12 inch square.
    4. Stir together the rest of the ingredients until well blended; taste and add more mustard and hot sauce if desired.
    5. Spread the filling mixture over the rolled out dough, leaving half an inch clear on all sides. Roll the dough with filling, jelly roll style, tucking in the sides and sealing the end with a little water.
    6. Chill in the refrigerator for about 15 minutes.
    7. Cut into half inch slices (or thicker if you wish). Place an inch apart on a veggie sprayed non-stick baking sheet.
    8. Bake for about 10-15 minutes (or until golden). Serve warm.

    Zucchini Cakes recipe

    Ingredients:
    2 cups shredded zucchini
    1 egg
    1 cup Italian seasoned breadcrumbs
    1 teaspoon mustard
    1 tablespoon light mayonnaise
    1 tablespoon Old Bay seasoning

    Preparation:
    1. Preheat the oven to 350 degrees F; grease a baking sheet.
    2. In a large bowl, combine the zucchini, egg, bread crumbs, mustard, light mayo and Old Bay seasoning.
    3. Mix well and form into patties.
    4. Bake for about 20 minutes on one side; turn the patties over and bake for 20 more minutes (or until golden brown).

    Oat and Fig Squares recipe

    Ingredients:
    24 dried mission figs
    1/2 cup rolled oats
    1/4 cup canola oil (or melted butter)
    1/4 cup nonfat milk
    1/4 cup honey
    1 1/2 cups whole wheat pastry flour
    1/2 teaspoon baking soda
    1/4 teaspoon salt

    Preparation:
    1. Preheat the oven to 350 degrees F.
    2. Put the figs in a small saucepan, cover with water, and bring to a boil. Turn off heat and let the figs soften for about 5-7 minutes. Do not drain.
    3. Lightly coat an 8×8-inch baking pan with cooking spray (or line with parchment paper or nonstick foil).
    4. In a small bowl, mix the canola oil (or butter), milk and honey.
    5. In a medium bowl, combine the rolled oats, flour, baking soda, and salt.
    6. Add the wet ingredients to the dry ingredients, then mix well.
    7. Remove the softened figs from the water and place them in a blender or food processor. Add 3-5 tablespoons of the water in which they boiled and puree until smooth.
    8. Place a little more than half of the oat mixture in the prepared pan and spread evenly across the bottom. Spread the figs evenly on top. Add the remaining oat mixture on top of fig layer, allowing some of the figs to show through. Pat lightly to flatten.
    9. Bake for about 20 minutes.
    10. Remove from the oven and cool completely in the pan on a wire rack. When cool, cut into 16 squares.

    Sweet Potato Fries recipe

    Ingredients:
    1 sweet potato, scrubbed and peeled
    cooking spray
    1 teaspoon cinnamon-sugar mixture

    Preparation:
    1. Dice the sweet potato into 1 inch cubes and toss with the cinnamon and sugar mixture.
    2. Spray a baking sheet with cooking spray, then spread the potato cubes over it. Spray the cubes again with cooking spray.
    3. Roast for about 30 minutes in a 350 degrees F oven.

    Southwestern Onion Rings recipe
    Ingredients:
    2 large sweet onions
    2 eggs
    2 1/2 cups buttermilk
    1 3/4 cups all-purpose flour
    3 tablespoons water
    1 teaspoon garlic powder
    2 teaspoons salt
    1 teaspoon ground cumin
    1-2 teaspoon cayenne pepper
    2 teaspoons chili powder
    1 teaspoon sugar

    Preparation:
    1. Slice the onions into 1/4″ slices and separate the rings.
    2. Put the onion rings in a bowl and add the buttermilk to cover them.
    3. Soak for about 30 minutes, stirring occasionally.
    4. In another bowl, beat together the eggs and water.
    5. Combine the flour, salt, garlic powder, chili powder, cayenne, cumin and sugar in a shallow dish.
    6. Drain the onion rings.
    7. Dip the rings first in the egg mixture, then dredge in the flour mixture.
    8. Heat 1″ of oil to 375 degrees F and fry the onion rings, a few at a time, until golden brown on each side.
    9. Drain and serve immediately.
