    Beetroot Raita



    Here is a simple side dish which requires very less afforts.Its a complete dish with the combination of all tastes in it.It looks too good with the pretty pink colour of the beetroot and the creaminess of the fresh yogurt which is blended into it.

    Ingredients:
    ____________
    Beetroot - 1 grated
    Onion - 1/2 cup finely chopped
    Green chillies - 2 finely chopped
    Yogurt/plain curds - 1.5 cups
    Chilly powder - 1/2 tsp
    Jeera - 1/2 tsp
    salt - as per taste
    Urad dal - 1/2 tsp
    Mustard - 1 tsp
    Oil -1/2 tsp
    Dry chillies - 2
    Curry leaves - 4-5

    Method:

    1.Take grated beetroot & greenchillies in a bowl add a bit of salt ,chillypowder and cook in microwave for 3 mins.
    2.Now mix the onions to the bowl
    3.Take some oil in a pan and put all the other remaining ingredients and just when the mustards starts spluttering add it to the bowl with beetroot and mix everything uniformly.
    4. Now add curds and mix properly.The dish is ready to be served.

    Default French Beans with Grams

    Ingredients:



    French beans – a bunch, chopped
    Grated coconut – 2 Tablespoons (I didn’t have fresh coconut on the day and substituted it with coconut powder. The result was just as yummy though).
    Urad Dal – 1 Teaspoon
    Chana Dal – 1 Teaspoon
    Curry leaves – 10-15
    Cumin seeds – ½ Teaspoon
    Mustard seeds – ½ Teaspoon
    Dry red chili – 1
    Oil
    Salt to taste

    Method:

    1. Heat oil in skillet and add mustard seeds, cumin seeds, the two types of grams or dal, red chili and curry leaves.

    2. When mustard seeds begin to splutter, add the chopped beans and salt to taste. Add a little water, cover the skillet, and cook on low heat until beans are tender.

    3. Add the grated coconut/coconut powder, mix well, and serve hot with parantha or chapatti.
