Ingredients

Eggs(boiled) - 4 nos
Potatoes - 3 nos
(cut into 1″ long thin slices)
Onions - 2 nos
(cut into thin slices)
Tomato - 2 nos
(cut into thin slices)
Curry leaves - 1 sprig
Green chillies - 3 nos
(spilt into two)
Red chilly powder - 1/2 tsp
Coriander powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Ginger(chopped) - 1/2 tsp
Garlic(chopped) - 1/2 tsp
Salt - As reqd
Oil - 2 tsp
Coconut oil - 1 tsp

For grinding:-

Shallots(Kunjulli) - 2 nos
Cumin seeds(Jeerakam) - 1/4 tsp
Grated coconut - 1/4 cup
Green chillies - 1 no

Method

1)Grind together the ingredients for grinding into a coarse paste.

2)Heat oil in a pan or a kadai.

3)Saute onions, garlic, ginger and green chillies.

4)Add coriander powder, red chilly powder and turmeric powder.

5)Add potatoes, tomatoes and salt.

6)Cook till potatoes are done.

7)Add coconut paste and cook for 2 mins.

Cut eggs into half add to the mix.

9)Mix well.

10)Finally, add coconut oil.
