    Default Kerala Snacks Recipes

    Parippu Vada



    Ingredients:

    Tur dal - 1 cup
    Small Onions chopped - 1/4 cup
    Green Chilly - 3
    Ginger chopped - 2 teaspoon
    Asafoetida - 1/4 teaspoon
    Salt - to taste

    Method

    Soak tur dal in water for about 1 hour. Then grind it in a mixer coarsely. To this add chopped onions, green chillies and ginger. Mix it well. Also add Asafoetida and salt to it. Take oil in a pan, heat it. Make round shaped vadas with the mixture and fry it in this oil.

    Ari Murukku



    Ingredients
    Raw rice - 4 cups
    White gram - 1/2 cup
    White sesame seeds - 25 gms
    Cumin seeds - 25 gms
    Asafoetida - 2 tablespoon
    Butter - 100 gms
    Salt - to taste
    Oil for frying

    Method
    Wash rice properly and then drain it. Spread this rice on a dry cloth and when it is dry blend it in a mixer. Sieve it for about 2 times and then keep it aside. Fry the white gram and powder them too. Keep this aside. Now mix together the powdered rice, white gram, white sesame seeds, cumin seeds, asafoetida, butter and salt. Do not add water to this mixture. Take some mixture and then make dough by adding little water. Now make the shape of murukku with it. Take oil in a pan and heat it. Put the murukku in this oil and then fry it. Turn over the murukku and fry well all the sides.

    Uzhunnu Vada


    Ingredients

    Black Gram Dal - 2 cups
    Curry Leaves - 3 sprigs
    Sliced green chillies - 1 teaspoon
    Chopped ginger - 2 teaspoon
    Asofoetida - 1/2 teaspoon
    Pepper corn - 1 teaspoon
    Salt - to taste
    Oil to fry

    Method

    Soak the black gram dal for about 2 hours. Drain the water and then make a fine paste of it. It should not be too thick or too watery. To this add green chillies, ginger, asofoetida, curry leaves, pepper and salt. Mix all this well and roll them into small balls. Flatter them from the hand itself. Make a small hole in the centre of this.Take some oil in a pan and heat it. Fry the vada in this and cook until it turns brown in color.

    Neyyappam



    Ingredients

    Jaggery - 1 cup
    Coconut pieces - 1 tablespoon
    Cardamom powder - 1 teaspoon
    Ghee - as required
    Gingelly oil - 3 teaspoon

    Method
    Soak the rice for about 3 hours. Wash it properly and then drain it. Spread this rice on a dry cloth and when it is dry blend it in a mixer. Sieve it for about 2 times and then keep it aside. Take the grated jaggery and mix water to it. Heat it over a flame and melt it to make thick syrup. Add cardamom powder and the coconut slices to the rice flour. Mix it well and keep the dough covered for sometime. Add water to this dough and mix well. Heat the appakaral and add oil to it. Take a spoonful of dough and pour it into the pits of the appakaral. Cook the appams for sometime till it turns brown color. Turn over and cook all the sides.

    Vegetable Cutlet


    Ingredients
    Green Chillies - 1 tablespoon
    Ginger - 1 piece
    Onion - 2 pieces
    Curry Leaves - 2 Sprigs
    Coriander Leaves - 4 sprigs
    Beetroot - 1/2 Cup
    Carrot - 1/2 Cup
    Potato - 2 Cup
    Bread Crumbs - 2 Cup
    Oil - 3 Cup
    Salt - to taste
    Fennel - 1 1/2 tablespoon
    Chilly powder - 1 teaspoon
    Cinnamon powder - 1/2 teaspoon
    Cloves powder - 1/2 teaspoon
    Turmeric Powder - 1 teaspoon
    Egg - 3

    Method
    Take some oil in a pan and saute curry leaves, green chillies, chopped ginger, and onion. Fry till they become golden brown in color and then add chilly powder, cinnamon powder, cloves powder, turmeric powder and saute for another 3 minutes. To this add slices of beetroot, carrot and salt and cook them for 5 minutes. Finally add the potato slices and coriander leaves and stir it. Allow it to cool and then make round shaped pieces with the mixture and keep it aside. Take oil in a pan and heat it. Take the cutlet and dip it in beaten egg and breadcrumbs. Fry this in oil and turn over both the sides and fry till they become golden brown color.

    Pakka Vada



    Ingredients
    Roasted gram flour - 3 cups
    Roasted rice flour - 1 cup
    Red chilli powder - 2 teaspoon
    Asafoetida - 1 pinch
    Salt to taste
    Ghee - 1/2 tablespoon
    Oil for frying

    Method
    Mix the roasted gram flour and roasted rice flour together with red chilli powder, asafoetida and salt. To this add ghee and mix well to make smooth dough. Use hot water to make the dough. Put it in the ribbon mould of the seva press to make ribbon shaped dough and fry it in oil. Fry until it turns brown color.

    Pazham Pori



    Ingredients
    Fully ripe plantains - 2
    Maida - 1 cup
    Rice flour - 2 tablespoon
    Sugar - 1 tablespoon
    Black sesame seeds - 1/4 teaspoon
    Baking soda - 1/8 teaspoon
    Water - 1/4 cup
    Salt - a pinch
    Oil - for frying

    Method
    Take the banana and cut it into 4 pieces lengthwise. Mix maida, rice flour, sugar, black sesame seeds and baking soda together. Add water to it and make a smooth paste. Make sure that it is not watery and not too thick. Take some oil in a pan and heat it. Dip the banana in this paste and fry it in oil. Deep fry this in a medium flame until it turns golden brown in color.
