Pav Bhajee

Ingredients:
Potatoes-2medium(half boiled)
Carrot-1medium(half boiled)
Tomatoes-2 medium
Cauliflower -1/4 small
Onions- 2 medium
Ginger -1 inch piece
Garlic -8cloves
Green capsicum- 1 medium
Green chillies- 3or 4
Fresh coriander leaves- 1/4 cup
Green peas- 1/4 cup(boiled)
Lemons -1
Oil- 3 tbsp
salt
Pav bhaji masala 2-tbsp
(Mothers recipe)
Butter- 3 tbsp
Pav -8
Method:
Heat oil in a pan and add onions Sauté till light brown.Add green chillies and ginger-garlic paste.Stir-fry for half a minute.Add half of the tomatoes and cook on medium heat for 3to4m, stirring
continuously or till oil separates from the masala Add potato
,carrot,capsicum, peas and cauliflower with one cup of water. Bring to a boil and simmer for 10 minutes,pressing with back of the spoon a few times till all the vegetables are completely mashed.Add pav bhajee masala, salt,and remaining tomatoes.
Cook on medium heat for2 minutes, stirring continuously.Heat half of the butter in a thick-bottomed pan or on a tawa. Slice pav horizontally into two and pan fry in butter for half a minute, pressing 2or3 times or till pav is crisp and light brown. Garnish the bhajee with chopped coriander leaves, remaining butter and serve hot with pav accompanied with remaining chopped onions and lemon .
