    Cucumber Tomato Raita

    Ingredients

    • 2 Cups Yogurt

    • 1 Cucumber

    • 2 Tomatoes

    • 2 Green Chilies

    • ½ Tsp Cumin Seeds

    • ½ Tsp Black Pepper

    • Coriander Leaves

    • Salt to Taste

    Method


    • Peel and grate the cucumber.

    • Cut chilies and tomatoes into small pieces.

    • Fry pepper, cumin seeds and grind them into powder.

    • Beat curd.

    • Add salt, masala powder, green chillies and mix well.

    • Add grated cucumbers and diced tomatoes. Mix well.

    • Garnish with coriander leaves and refrigerate the mixture for 1-2 hours.

    Mixed Fruit Raita

    Ingredients

    • 2 Cups Curd

    • 1 Cup Milk

    • 4 Bananas

    • 1 Pineapple

    • 2 Apples

    • 1 Mango

    • 1 Cup Pomegranate Seeds

    • 1 Cup Dry Fruits

    • Sugar to Taste

    Method

    • Beat curd.

    • Cut all fruits in small cubes and add to the curd.

    • Mix milk and sugar.

    • Add dry fruits.

    • Garnish the fruit raita with pomegranate seeds.

    Carrot Raita Recipe

    Ingredients

    • 2 Cups Curd

    • 1 Cup Grated Carrots

    • 1 Green Chili

    • ½ Tsp Black Salt

    • ½ Tsp Black Pepper

    • ½ Tsp Cumin Seeds

    • Salt to Taste

    Method

    • Beat curd

    • Scrape outer skin and grate carrots.

    • Fry black pepper and cumin seeds and grind them into coarse mixture.

    • Mix all Ingredients: and place in the refrigerator for 1-2 hours.

    Boondi Raita Recipe

    Ingredients

    • 2 Cups Curd

    • 100 Gms Besan Flour

    • Oil To Fry

    • ½ Tsp Roasted Cumin Powder

    • Salt to Taste

    • Red Chili Powder to Taste

    • Little Garam Masala Powder

    • Coriander Leaves

    Method


    • Mix water to gram flour well to spreading consistency.

    • Add salt and beat till becomes light.

    • Heat oil and pass the paste through draining spoon.

    • Fry till it turns into golden color.

    • Beat the curd.

    • Add boondi to curd and mix gently.

    • If it is too thick, add little milk and mix it.

    • Add salt, cumin powder and chili powder, mix well.

    • Sprinkle garam masala and garnish with chopped coriander.

    • Place in the refrigerator for 1-2 hours.

    Beetroot Raita

    Ingredients

    • 1 Small Beetroot

    • ½ Cup Grated Coconut

    • 2 Cups Yoghurt

    • Salt to Taste

    • 1 Tsp Oil

    • ½ Tsp Mustard Seeds

    • Few Curry Leaves

    • Few Coriander Leaves

    • 2 Green or Red Chilies

    Method

    • Wash, peel, boil and dice beetroot.

    • Mix yogurt, coconut, salt, beetroot.

    • Heat oil and add mustard seeds.

    • When seeds splutter, add red/green chilies.

    • Pour over the raita.

    • Garnish with coriander and curry leaves.

    • Serve chill.

    Potato Raita Recipe

    Ingredients

    • 2 Cups Curd

    • 2 Potatoes

    • Red Chili Powder

    • 1tsp Roasted Cumin Powder

    • Salt to Taste

    • Coriander Leaves

    Method

    • Beat curd.

    • Boil, peel the outer skin and mash potatoes.

    • Add potato paste and mix well.

    • If it is too thick, add little milk and mix it.

    • Add salt, cumin powder and chili powder, mix well.

    • Garnish with coriander leaves.

    • Place in the refrigerator for 1-2 hours.

    Onion Raita Recipe

    Ingredients

    • ½ Kg Curd

    • 4 Onions

    • 1 Green Chili

    • 1 Ginger

    • Few Coriander Leaves

    • 1 Tsp Oil

    • ¼ Mustard Seeds

    • Salt to Taste

    Method

    • Beat curd.

    • Slice onions and chilies into small pieces.

    • Mix onion, salt, green chilly and coriander leaves with curd.

    • Heat oil and add mustard seeds.

    • When they splutter, add to the raita.

    • Refrigeration of 1-2 hours before serving is good.

    Spinach Raita Recipe

    Ingredients


    • 2 Cups Yogurt

    • 1 Bunch Spinach

    • 2 Tsp Oil

    • 1 Tsp Black Mustard Seeds

    • 1 Tsp Cumin Seeds

    • 1 Tsp Ground Cumin

    • ½ Tsp Fenugreek Seeds

    • ¼ Tsp Chili Powder

    • Salt and Black Pepper to Taste

    Method


    • Wash spinach thoroughly under tap water.

    • Remove any tough stems and cut spinach into pieces.

    • Boil spinach with little water till it becomes tender.

    • Heat oil and fry the mustard seeds.

    • Add cumin seeds, ground cumin and fenugreek seeds and fry.

    • Remove from heat and mix in the yogurt.

    • Add chili powder and stir this mixture into the spinach.

    • Place in the refrigerator for 1-2 hours

    Sweet Gourd Raita

    Ingredients

    • 2 Cups Curd

    • 1 Cup Grated Sweet Gourd

    • 1tsp Cumin Powder

    • Salt to Taste

    • Red Chili Powder to Taste

    Method

    • Grate sweet gourd.

    • Boil grated sweet gourd till soft, drain and cool it.

    • Beat curd.

    • Add sweet gourd paste and mix well.

    • If curd is thick, mix little milk or water.

    • Add salt, cumin powder and chili powder, mix well.

    • Place it in the refrigerator for 1-2 hours.
