    Chocolate Carrot Cake

    Ingredients


    1 1/2 c Finely grated carrots
    3/4 c Granulated sugar
    1/2 c Canola oil
    1 c Boiling water
    1 1/2 c Wholewheat flour
    1/2 c Unsweetened cocoa powder
    1 ts Cinnamon
    1 1/2 ts Baking powder
    1/2 ts Salt

    Method


    In a large bowl, combine carrots, sugar & oil. Pour water over the mixture. In a separate bowl, combine the rest of the ingredients. Add to the carrot mixture & mix well. Pour into a non-stick or lightly oiled 8" square pan. Bake for 35 minutes.

    White Chocolate Brownies


    Ingredients

    6oz imported white chocolate, cut up
    3/4 cup sugar
    1 stick (4oz) butter
    2 eggs
    1-1/2 teaspoons vanilla extract
    1 cup flour
    1/2 teaspoon baking powder
    Dash of salt
    6oz semisweet or bittersweet chocolate, cut up
    1/2 cup chopped walnuts

    Method

    1. Preheat oven to 350F. In a 2-quart glass bowl, combine white chocolate pieces, sugar, and butter. Heat in microwave oven on High about 1-1/2 minutes, or until melted and smooth when stirred.
    2. With a whisk or fork, beat in eggs and vanilla until well blended. Add flour, baking powder, and salt and stir until well mixed. Stir in bittersweet chocolate and walnuts.
    3. Spread evenly in a buttered, foil lined 7x11 inch baking pan. Bake 20 to 25 minutes, or until golden
    brown. Do not overbake. Let cool, then cut into 24 pieces.

    Chocolate Sauce

    Ingredients

    6 oz white sugar
    1/4 pt (5 fluid oz) water
    2 oz cocoa powder

    Method

    Stir sugar and water over heat until dissolved. Boil hard for one minute. Remove from heat and whisk in 2 oz cocoa. Bring just to boil again, then allow to stand and thicken. This thickens up as it gets cold, and should be kept in the 'fridge. NOT low-calorie!!!

    Chocolate Banana Bread

    Ingredients

    1 Cup Bananas mashed
    1 1/2 Eggs
    3 Tablespoons Butter
    1 1/2 Teaspoons Vanilla extract
    1/4 Teaspoon Salt
    1/2 Teaspoon Cinnamon
    1 1/2 Tablespoons Unsweetened Cocoa
    3 Tablespoons Sugar
    3 Cups Bread flour
    2 Teaspoons Yeast
    3 Tablespoons Chopped walnuts optional

    Method

    As with any bread which derives liquid from the fruit, watch the dough and add milk or water, if necessary, one Tablespoon at a time, until a nice round ball of dough is formed.

    Oatmeal chocolate Chip Bars

    Ingredients

    1 1/2 cups brown sugar
    1 cup shortening
    2 Tbs. molasses
    2 tsp. vanilla
    2 eggs
    3 cups rolled oats
    1 cup flour
    1 tsp baking soda
    1 tsp. salt
    3/4 cup chopped walnuts
    12 oz pkg. semi-sweet chocolate chips

    Method

    Preheat Heat oven to 350. Grease a 13x9 inch pan.
    In large bowl, beat brown sugar and shortening until light and fluffy. Add molasses, vanilla and eggs and blend well.

    Stir in oats, flour, baking soda and salt and blend well. Stir in nuts and chocolate chips.
    Spread in prepared pan and bake at 350 degrees F for 20-25 minutes or until light golden brown and center is set. Cool slightly; cut into bars.

    Chocolate Rum balls

    Ingredients

    2 cups chocolate wafer cookie crumbs
    1 cup ground pecans
    1/2 cup powdered sugar
    1/3 cup rum
    3 Tbs. corn syrup
    1/2 cup chocolate chips
    3/4 cup chocolate sprinkles

    Method

    In bowl, combine cookie crumbs, pecans, sugar, rum and corn syrup.

    shape into 1 inch balls measuring about 1 Tablespoon of mixture.
    Line a tray with wax paper. Place balls on a tray and refrigerate until cold.

    In a double boiler using hot (not boiling) water, melt chocolate; let cool slightly.

    Dip balls into melted chocolate with only a thin coat. Roll in candy sprinkles. Place balls on the waxed paper lined tray until chocolate is set.
