    Default Chicken Salad Sandwich

    English Muffin Chicken Salad Sandwich

    Ingredients

    * 2 cups cooked and chopped chicken
    * 2 green peppers
    * 1/3 cup almonds
    * 1 medium sized onion
    * 2 celery ribs
    * ½ cup mayonnaise
    * 1-2 teaspoon grounded mustard
    * ¼ cup pimiento-stuffed olives
    * salt- as per taste
    * 2-3 tomatoes
    * ½ -¼ tablespoon pepper
    * ¼ sweet pickle relish
    * English muffins

    Preparation

    Dice the chicken into cubes and the green peppers into small pieces. Chop the onion and celery ribs into thin pieces and slice the pimiento-stuffed olives too. Take a large salad bowl and mix all these ingredients well with mayonnaise. Add mustard, sweet pickle relish, salt and mix well. Toast the almonds and add to the salad to make the salad crunchy. Toast the English muffins and spread the salad on these muffins, with thin tomato slices on top. Instead of muffins you can use croissants or brown bread. You can also add honey BBQ sauce and cheese for extra taste.

    Chicken-Egg Salad Sandwich

    Ingredients

    * 2 eggs
    * 2 cups cooked and diced chicken
    * 2½ tablespoon celery
    * 1½ tablespoon pickle relish
    * 1 medium sized onion
    * ½-1 cup mayonnaise
    * 2½ tablespoon stuffed olives
    * Salt and pepper- as per taste
    * Butter

    Preparation

    Cook the eggs till they are fully boiled and chop them into small pieces. Cut the onion, stuffed olives and celery into thin slices. Mix all these ingredients with the diced chicken and blend well with mayonnaise and pickle relish. Add salt and pepper to taste. Apply butter on the bread and spread the salad filling on it, and the chicken-egg salad sandwich is ready.

    Chicken Fruit Salad Sandwich

    Ingredients

    * 2 cups diced chicken
    * 1 cup green or red grapes
    * ½ cup mayonnaise
    * ¾ cup celery
    * salt and pepper - as per taste
    * ½ cup sour cream

    Preparation

    Dice the grapes into halves and peaches into cubes. Take a large salad bowl and mix the grapes, peaches and celery with the chicken. In another bowl, mix the sour cream with mayonnaise and allow it to blend well. Pour this mixture into the salad bowl and add salt and pepper to taste. Chill it till serving. Toast the bread and apply the salad mix on it.

    Chicken Vegetable Salad Sandwich

    Ingredients
    • ½ cauliflower
    • 3 medium sized carrots
    • 2 bell peppers
    • 2 cups cooked chicken, cubed
    • ½ cup mayonnaise
    • 1 tablespoon lemon juice
    • Black pepper and salt - as per taste
    • ¼ cup ripe olives
    • ¼ cup chili sauce
    • ¼ cup parsley
    • ½ cup French green beans

    Preparation

    Slice the cauliflower, carrots, green beans and bell pepper finely and cook them. While the vegetables are been cooked, mix the mayonnaise, chili sauce, lemon juice, salt and pepper together, in a bowl. Let the cooked vegetables cool and put them into the chicken bowl and toss. Pour the mixture in it and mix well. Spread on any kind of bread and serve.

    The main advantage of a chicken salad sandwich is that you can experiment with the recipe. You can add or leave out certain ingredients, match it with your favorites and come out with a lip smacking sandwich.
