Jackfruit Chips

Ingredients:
* Raw jack fruit- 1 whole fruit or half (depending upon your needs)
* Turmeric powder- 1/2 tsp
* Salt- to taste
* Water- 3 tbsp
* Vegetable oil- enough for deep frying
Preparation:
* If using fresh jackfruit, it’s a good idea to oil your knife and hands first before cutting, as the fruit has sticky latex in it.
* First cut the fruit into half and remove the central core from it.
* Pull out the flesh bulbs from the rag and remove the seeds from it.
* Cut the fruit into thin long wedges; make sure to cut all the fruits evenly for better frying.
* Combine the turmeric powder, salt and water in a small bowl and keep aside.
* Heat a deep fryer or a frying pan in medium-high, add enough oil for frying, wait till the oil is heated through, add the cut fruits and fry it stirring constantly.
* While frying, add about 1/2 tsp of turmeric, water, and salt mix and give it a stir.
* When adding the turmeric mix, step back as the oil will bubble up making a slight sound; don’t panic, it will settle down soon.
* Fry until the chips turn golden brown and transfer it to a platter with paper towel on it.
* When it cools down, don’t even wait for another second, grab a handful and start chewing the crispy chips.

Jack fruit ada

Ingredients
1.Jack fruit (ripe) - 350g
2. Rice powder - 2 cups
3. Jaggery (crushed fine) - ¼ kg
4. Coconut (scraped) - 1 ½ cup
5. Copra (dried coconut) pieces - 2 dessert spoons
6. Coconut leaves / Bay leaves – as required
Preparation
* Chop the jack fruit into tiny pieces.
* Mix the jack fruit with jaggery and coconut along with 1 pinch of salt
* Heat water in an idli cooker / steamer ( ¾th level of water)
* Cut the banana leaves, each into foldable notebook sizes.
* Pour 4 to 5 dessert spoons of the jackfruit mixture and spread evenly on one side of the each leaf. Fold once done.
* Repeat the above step until all are done.
* Lastly place them in the steamer. Cover and cook for 30 to 45 minutes.
* Note: Gently heat the banana leaves so that it doesn’t tear.

Jack fruit Payasam

Ingredients
* 1 cup sliced or chopped jack fruit
* 2 cups coconut milk(2nd milk)
* 1/4 cup thick coconut milk(1st milk)
* 1 cup melted jaggery(200 gms)
* 1 tblsp ghee
* 5-6 cashew nuts
* few raisins
* few thinly sliced coconut
* 1 tsp cardamom powder
Directions
1. heat ghee and roast the cashew,raisins and sliced coconut till light brown and set aside.
2. in the same ghee fry in the sliced jackfruit pieces till it turns colour.
3. add in the 2nd milk of the coconut and let the jackfruit to boil well in it.
4. now add the jaggery and again cook till the whole mixture is nice and thick. this will take atleast 15-20 minutes.
5. add the cardamom powder and also the fried cashew raisin mixture.
6. pour in the 1st milk of cocnut and immediately turn off the gas.
7. serve hot garnished with coconut cream

Chakka Vevichathu/Kuzhachathu

Ingredients
Chakka chula/Jackfruit flesh - 500 gms
Grated coocnut - 1 cup
Turmeric powder - 1/2 tsp
Cumin seeds - 1/2 tsp
Green chilli - 2-3
Garlic - 3 cloves
Mustard seeds - 1/2 tsp
Oil
Curry leaves
red chilli - 1
Salt to taste
Method
Cook cleaned chakkachula/jackfruit flesh with 2 cups of water and salt to taste, until it is done,
for 15-20 minutes
Meanwhile Grind grated coconut , turmeric powder , cumin seeds, green chilli and garlic to a
coarse paste, by adding very little water.
Combine the coconut paste with the cooked jackfruit and mix it well using a big spoon.Add more
salt if needed
Heat oil in a pan and add mustard seeds. when they pop up add dried red chillies and curry leaves
and pour it over the jackfruit-coconut mix.Serve warm!!!!

Chakka Varattiyathu

Ingredients
Ripe Jack fruit - 2 kg
Jaggery - 1 kg
Water - 2 cups
Ghee - 1/2 - 1 cup
Dried ginger powder(Chukku) - 1 tbsp
Cardamom(Elakka) powder - 1/2 tbsp
Method
1)Cut jackfruit into small pieces.
2)Cook in a pressure cooker with one cup of water. Allow it to cook for 6-8 whistles.
3)Either ground this cooked jackfruit in a mixer grinder or transfer this to a wide necked vessel like `urali` and allow all the water to disappear stirring occasionally.
4)Meanwhile, cook the jaggery with one cup of water and make a thick syrup.
5)Pour this to the cooked jackfruit and stir continuously till it becomes thick.
6)Add ghee little by little.
7)Also add the dried ginger powder and cardamom powder.
:- When you think this is sticking to the bottom of the pan, add more ghee.
Now when this starts to form a ball, stir for 1 more minute and remove from fire.
9)Cool and store in an air tight container.

Fried Jackfruit
Fried Jackfruit

Ingredients:
raw jack fruit - 1/2 kg
rice flour - 2 to 3 tbsp
chili powder - 1 tsp
asafetida - 1/2 tsp
oil to deep fry
salt to taste
Method
1. Cut away the thorny green skin and the white core of the jack fruit.
2. Cut the fruit into 1.5 cm thick slices.
3. Rub the slices with chili powder, asafetida and salt.
4. Keep aside for 15-20 minutes.
5. Sprinkle the slices with 1 tbsp of water and about 2 tbsp of rice flour.
6. This will make the masala stick to the slices and also give a crisp outer crust.
7. Deep fry the slices in moderately hot oil till brown.
8. Drain well and serve hot.
9. The slices should have a crisp crust and remain soft inside.
Note:
* This simple preparation is a delicacy of west coast of India.
* Use tender jack fruit which is just beginning to mature and has soft, tender seeds.
* This variety is widely used for cooking.
* While peeling and cutting this, lightly smear your knife with oil to prevent the milky wax of the fruit from sticking to the knife.

Chakka Eriseri(Traditional Jackfruit curry)

Ingredients
Chakka - 1/2 kg
Grated coconut1 - cup
Red chillis - 2
Jeera(cumin seeds) - 1/2 tsp
For seasoning
Grated coconut - 2tbsp
Mustard seeds - 1tsp
Jeera(cumin seeds - 1/2 tsp
Curry leaves - few
Method
(Raw) jackfruit seed is removed from the thin outer part of chakka. Cut these into small pieces. Boil 3cups of water adding chakka pieces and turmeric and salt.
Grind the grated coconut. chili and jeera, When the chakka is cooked add the ground paste and stir it well.Heat a pan with little oil, add grated coconut, mustard seeds jeera and curry leaves. When the coconut become red add to the chakka eriseri.This curry is very tasty.Serve with rice.
I tried with the frozen raw jackfruit and the chakka eriseri came out very well..

Jackfruit shake

Ingredients:
5 - pitted jackfruit pieces
2 cups - milk
5 tbsp - sugar
2 tsp - honey
Method
Chop jackfruit into small pieces and blend it along with milk and sugar.
Freeze it in a glass and serve it topping with a tsp of honey.
